-Waldine Van Geffen VGHC42A 1/4 pound Margarine
1/2 cup Celery
chopped
1/2 cup Bell pepper :
chopped
1/2 ounce Parsley flakes
1/2 cup Onion chopped
1 package Crawfish tails
1 teaspoon Salt
1/2 teaspoon Pepper
1/2 pound Cheddar cheese
1/2 Jar cheese sauce
1 cup Milk
2 Egg yolks :
beaten
1 teaspoon Cornstarch
1 tablespoon Water
In saucepan combine margarine, celery, bell pepper, parsley and onion over low heat. Saute for 5 minutes. Lower heat and simmer for 10 minutes. Add crawfish talks, salt and pepper. Let simmer for 10 minutes. In double boiler combine cheese, cheese, sauce, milk and egg yolks. Mix cornstarch with water. Add to cheese mixture and let boil for 5 minutes. Pour crawfish mixture into cheese mixture and blend well. Pour into casserole dish. Bake at 350 for 10 minutes. Serve hot. NOTE: I would serve over hot rice or pasta. (wrv)

If you try it you want be disappointed. this sauce can be used on any kind see food and you can add any tip of sea food to the sauce. I really like using mine in fish and any kind of surf ant turf. If you really do like sea food then you will really love this sauce on just about anything like steak, seafood, potatoes, french fries and much or. so go on and give it a try you want be disappointed.
Ingredients
2 Tbsp of butter
1 Tbsp of minced garlic
1 small onion
2 cups heavy whipping cream
2 Tbsp of lemon juice
1 lbs of crawfish tails
1tsp of Worcestershire sauce
1/4 cup chopped green onions
2 tsp of Old Bay
1 tsp of hot sauce
salt and pepper to taste

1 to 1-1/2 stick of Garlic Butter or regular butter.
1/2 lb Seasoning Blend, or 1 Sml-Med Bell Pepper, 1-yellow or white Onion, 2 stalks celery, 3-stalks Green Onion. ( All chopped up to small pieces )
3 Tbs Cajun or Creole Seasoning.
1- Tbs Pepper.
1- Tsp Salt.
1- Tsp Garlic and Herb Seasoning.
1- Tsp or a little more of Minced Garlic.
3- Tbs All Purpose Flour.
1 Pint of Heavy Whipping Cream, Or Half and Half, Or Whole milk ( Your Choice )
1- lb Pack of Louisiana Crawfish Tails.

The Very Best Potatoes Au Gratin Recipe
Thinly sliced potatoes are combined with butter, cream and tons of cheese before being baked to a bubbly, golden perfection. Simple to prepare and fantastic for entertaining.

INGREDIENTS
3 ounces Butter
1 garlic clove minced
4 tablespoons cornstarch
1 teaspoon kosher salt
1/2 teaspoon fresh ground pepper
2 cups low-fat milk
2 cups shredded white cheddar
5 cups thinly sliced yukon gold potatoes
INSTRUCTIONS
Preheat oven to 350°.
In a large saucepan, melt the butter over low heat. Stir in the garlic and cook 1 minute. Whisk in the cornstarch, salt and pepper until smooth.
Gradually add the milk and bring to a boil. Cook the sauce stirring constantly until thickened, approximately 2-3 minutes.
Remove from heat and stir in 1 1/2 cups of the cheese until melted. Stir in the potatoes.
Transfer to a 2 quart baking dish coated with cooking spray. Sprinkle with the remaining cheese. Cover and bake 30 minutes. Uncover and bake an additional 30-45 minutes or until the potatoes are tender and the sauce is golden brown and bubbling.
Remove from the oven and allow to stand 5-10 minutes before serving.

Crawfish Au Gratin
This delicious recipe is a great way to use leftover crawfish from crawfish boils. It is peak crawfish season right now, so there are plenty of crawfish to go around. It's almost hard to avoid them around here. Combine crawfish with some onions, celery, roux, and cheese, and it can't be anything other than delicious. This is a delicious appetizer or can be had as just a meal by itself. I do it thin like this to serve with crackers as an appetizer, but I'll do it in smaller, deeper dishes to make the au gratin taller and eat with a spoon as well. Anyway you choose to do it, c'est bon!
This week's artist is yet again Harry Connick Jr. He is a favorite of mine, and this version of Jambalaya is my favorite. He makes some really nice changes that add a real Louisiana and New Orleans flair to the song that I love.
