The Best Apple Pie With Claire Saffitz | Dessert Person
I love an elaborate dessert on occasion, but after lots of trial and error, I’ve learned over time that when it comes to apple pie, simplest is always preferable. For Thanksgiving, what I want underneath a scoop of vanilla ice cream is a slice of buttery, cinnamony pie that tastes of apples and features a variety of textures. This pie, with an oat crumble topping rather than a top crust of lattice, checks all of those boxes.

Classic Apple Crumble Pie
Serves 8
Ingredients:
For the Crumble:
1 cup all-purpose flour
1 cup old-fashioned rolled oats (not quick cooking)
⅓ cup packed light brown sugar (2.3 oz / 65g)
1 teaspoon ground cinnamon
½ teaspoon kosher salt
10 tablespoons unsalted butter, cut into ½-inch pieces, chilled
For the Pie:
1 recipe homemade pie dough, chilled (enough for a single-crust pie)
All-purpose flour, for rolling
3 pounds Granny Smith apples, peeled, cored, and sliced into ½-inch-thick wedges
½ cup packed light brown sugar
3 tablespoons cornstarch
2 teaspoons ground cinnamon
2 teaspoon apple cider vinegar
½ teaspoon kosher salt
2 tablespoons unsalted butter, cut into ½-inch pieces, chilled

INGREDIENTS
- 1 recipe 9-inch pie crust (recipe here:
- 8 cups peeled and sliced apples
- 2 tbsp lemon juice
- 3 tbsp all-purpose flour
- 1 tbsp cornstarch
- 1/2 cup white granulated sugar
- 1/4 tsp kosher salt
- 1/4 tsp allspice
- 1/2 tsp cinnamon
For the crumble topping:
- 1 cup all-purpose flour
- 2/3 cup light brown sugar
- 8 tbsp unsalted butter, room temperature
INSTRUCTIONS
- Preheat the oven to 400°F.
- Combine the prepared apples, lemon juice, flour, cornstarch, sugar, kosher salt, allspice, and cinnamon in a large bowl. Mix to combine and pour into a prepared pie crust. The apples will be mounded.
- In a medium bowl, combine the flour and brown sugar. Mix together and add the butter. Work the soft butter into the dry mixture until it resembles wet sand. Sprinkle the crumble evenly over the prepared pie.
- Place the pie on a parchment-lined baking sheet and bake in the lower third of the preheated 400°F oven. Bake for 30 minutes and reduce the heat to 375°F. Continue baking until the pie is bubbling into the center or reaches 200°F in the center of the pie, 45-55 minutes. The top or crust may need to be covered with foil if it gets dark during baking. Once baked, remove from the oven and allow the pie to fully cool before slicing and serving.

Ingredients:
For the crust:
2¾ cups (250g) Rolled oats
1¾ cups (220g) Flour
3/4 cup (150g) Brown sugar
1/2 cup (100g) White sugar
1 teaspoon Cinnamon
1/2 teaspoon Salt
1 cup (230g) Butter, cold
For the filling:
5 apples
2 tablespoons (15g) flour
2-3 tablespoons sugar
1 teaspoon cinnamon
Directions:
1. Preheat oven to 350F (175C).
2. Make the crust: in a large bowl, mix oats, flour, brown sugar, white sugar, cinnamon and salt. Add cold, cubed butter and mix with your hands until crumbly. Reserve two cups of the mixture in the fridge for a later use.
3. Press the remaining crust mixture into a baking pan (13*9 inch). Press firmly.
4. Bake the crust for 15 minutes, then set aside.
5. Make the filling: peel the apples, then thinly slice. Arrange apple slices in a row on the cooled crust.
6. Sprinkle the apples with flour, sugar and cinnamon. Then, crumble the reserved crust mixture.
7. Bake for 35 minutes, until the crust is golden brown and the apples are tender.
8. Allow to cool, then cut into bars.
Notes:
• In the video you can see I’ve arranged apple slices in one row, but after trying it, I think it’s not enough, try layering two layers or more (5 apples should be enough).

Pie Crust
1 3/4 cup all purpose flour
1/2 cup cornstarch
1/2 tsp salt
4 tbsp granulated sugar
3/4 cup Graham cracker crumbs
2/3 cup shortening
4 tbsp butter browned
1/2 cup cold water
An easy way to roll out pie crust is to place between two pieces of parchment/baking paper. Roll, remove top parchment and place pie crust with bottom parchment in pie dish. You can cut off excess parchment from sides.
sometimes I will press pie crust into dish rather than roll it out to make it easier. However you choose make sure the crust is even on bottom.
Crumble
1 and 1/4 cup flour
4 tbsp cold butter
4 tbsp browned butter
1/2 cup brown sugar
1 tsp ground cinnamon
Filling
3 large apples
1/4 cup brown sugar
1 tbsp vanilla
1 tsp ground cinnamon
juice of 1 lemon or 2 tbsp orange juice
1 tbsp unsalted butter
1 and 1/2 tbsp flour

Apple crisp is a simple dessert of apples topped with a crumbly, sweet pastry mixture, like a streusel, baked until brown and crisp. Isabel Ely Lord created the earliest written record of this recipe in 1924 in the Everybody's Cookbook. However, it didn't become popularized until WWII when pastry products like sugar, butter, and flour were rationed. The more elaborate apple pie was out, and the apple crisp was in.

• 1 cup oats 100 g
• ½ tsp sea salt
• 1 ½ tsp cinnamon

• ½ cup walnuts 50 g
For the Filling:
• 4 granny smith apples
• 4 fuji apples 1000 grams total
• 3 tablespoons ap flour
• ½ cup brown sugar 100 grams
• 1 ½ teaspoons cinnamon
