How To make Dark Fruitcake
2 c Golden raisins
2 c Currants
2 c Dried apricot halves
2 c Dried figs, halved
1 c Pitted prunes
1 c Pitted dates
4 c Walnuts, in large pieces
2 c Pecans, in large pieces
3 Oranges, Grated zest only
3 Lemons, Grated zest only
1/2 c Candied ginger, chopped
2 ts Cinnamon
1 ts Ground allspice
1 ts Mace
1/2 ts Cloves
1 c Molasses
2 c Brandy
-(or substitute apple juice - or water) 1/2 c Orange liqueur
- (or orange juice) 4 c All-purpose flour
1 tb Baking powder
1 ts Baking soda
1 1/2 ts Salt
1 lb Butter
3 c Dark brown sugar
8 Eggs
1 tb Vanilla extract
THE DAY BEFORE combine all dried fruits, nuts and zest in a mixing bowl. Add the candied ginger and the spices and toss well to mix. Add molasses and liquids and mix well. Cover and let stand overnight at room temperature. When ready to bake, preheat oven to 275F. Grease 4 (9-by-5-by-3-inch) loaf pans, line them with waxed paper and grease the paper. Coat lightly with flour. Sprinkle 1 cup flour over fruit mixture and stir it. Combine the remaining 3 cups of flour with baking powder, baking soda and salt and sift them together on a sheet of waxed paper. Cream the butter, add the brown sugar and beat well. Add eggs, 2 at a time, beating well after each addition. Add the vanilla. Add all dry ingredients and beat until batter is blended and smooth. Pour batter over fruit, mix well until everything is coated with batter. Divide batter among loaf pans, filling to 1/2 inch below top. Bake for 2 hours. Don't worry if they crack on top.
Cakes are done when a straw inserted in the center comes out clean. Makes 4 Cakes

Old-Fashion Rum Fruitcake
Recipe listed below in the description. This fruit cake is a classic old recipe with lots of butter and rum. Fruits and nuts can be your choice. This is kind of like a made to your specifications fruitcake. It is very moist and even if you choose not to age it the cake is still very moist. My choice is never to use citron but only candied orange peel. Making a fruitcake for Christmas use to be a family tradition in this country however, now it seems not as many people are making them home made. I think some form of alcoholic drink was used in fruitcakes to preserve them and to add flavor. All the alcohol evaporates and just leaves the taste behind. My mother did not believe anyone should use alcohol, not even for flavoring a fruitcake so she always used Welch's grape juice instead of wine in her recipe.
Here's the recipe:
OLD FASHION RUM FRUIT CAKE
2 14 cups sifted all-purpose flour
1 1/2 cups butter
1 1/2 cups sugar
6 large eggs
3/4 cup dark corn syrup
1 cup light rum
1 1/2 teaspoons vanilla extract
1 1/2 teaspoons ground nutmeg
1/2 teaspoon salt
Beat all together until smooth and sugar is dissolved, about 5 minutes.
Fruit and nuts
3 cups chopped pecans and/ or walnuts
4 ounces diced candied orange peel
8 ounces candied pineapple
8 ounces candied green cherries
16 ounces red candied cherries
8 ounces chopped dates
2 tablespoon crystallized ginger snipped into small pieces
Dredge fruit and nuts in 2 1/4 cups sifted all-purpose flour.
Pour batter over fruits and nuts making sure all are covered.
Line and grease large tube pan, see my video
Spoon into large tube pan.
Bake in slow 250 degree oven for 2 - 2 1/2 hours or until toothpick inserted into center of cake comes out clean.
Remove from oven when done and pour 1/2 cup rum over cake. Allow to cool in pan overnight.
Next morning remove from pan, then slowly remove paper lining. At this point you can also add another 1/2 cup of rum. Age 1-2 weeks in bottom of refrigerator.

This fruit cake requires a lot of ingredients and spices, but since we are home bakers, you can use whatever is available to you. You can add nuts and fruits of your choice. This is just a guide and whatever I have added on this fruit cake, that is what our budget allowed. :)

Stewed Fruits Recipe
**Ingredients for blended fruits**
1 lb prunes, seeded and chopped
1 lb raisins
1 lb currants
1/2 Ib cherries chopped
Any other fruits of your choice
1 bottle of rum
1 bottle of cherry brandy or wine
(Spices)
**Ingredients for cake **
2 cups or 1 lb butter
2 cups or 1 lb sugar
9 large eggs
2 tsp grated lime or lemon peel
2 tsp vanilla extract or 1 tbsp vanilla essence
1 1b or 4 cups flour (baking or all purpose) (sifted)
4 tsp baking powder
1 tsp salt
1-2 tsp mix spice
2 tsp ground cinnamon
2 tsp nutmeg
1/4 cup browning or more for darker color
4-5 cups of soaked blended fruits
The day before or some days before baking, boil the fruits (prunes, raisins, currants, cherries) Link is provided
Line cake pans with 1 layer of wax
paper.
Cream butter and sugar until light and fluffy.
Break eggs into a bowl, add lime peel then pour into the batter gradually.
Add fruits to blender and lightly blend, then add to batter.
Add enough browning to give desired colour, along with vanilla essence or extract
Combine flour, baking powder, cinnamon, salt, nutmeg, fold into creamed mixture gradually.
Add more rum to your desired taste.
Pour batter into lined baking pans and bake in a preheated oven at 220 degree celsius for first 45 minutes.
Reduce heat to 200 degree for the remaining 45 minutes, or until tester comes out clean.
(Place water pan at the bottom of the oven)
Prick hot cakes and soak with a mixture of
rum and cherry brandy. (Any Alcohol You Desire)
Cover and set aside to cool.
Soak overtime for a few days to keep moist.
