How To make Deviled Codfish Patties
1 1/2 lb Cod fillets, fresh or frozen
1 c Boiling water
1/4 ts Salt
1/2 c Breadcrumbs, soft
2 tb Parsley, chopped
1/2 c Salad dressing (mayonnaise)
1 c Egg
1 tb Prepared mustard
1 tb Lemon juice
1 ts Worcestershire sauce
1/8 ts Pepper
Paprika, as desired Thaw frozen fish. Preheat oven to 400 F (hot). Grease baking sheet. Add fish to boiling, salted water. Cover and bring to a boil. Reduce heat and cook 4 minutes or until fish flakes easily. Drain and flake. Remove bones, if present. Mix fix, breadcrumbs, and parsley. Mix salad dressing (mayonnaise), egg, mustard, lemon juice, worcestershire sauce, and pepper thoroughly. Stir into fish mixture. Mix well. Form into 12 patties about 3 inches in diameter and 3/4 inch thick on baking sheet. Sprinkle with paprika. Bake 15 to 20 minutes or until lightly browned. In today's recipe we show you how to make an easy version of Smoked haddock fish cake... well you can't eat curry every day... ok you can but it's no good for you!
Ingredients
200g smoked haddock fillets 2 cups cooked mashed/crushed potato 2 tbsp parsley (chopped) 2 tbsp spring onions (sliced) 1 egg (beaten) flour for dusting a good knob of butter oil for frying
Shrimp Fritters With Cajun Remoulade
Crispy deep fried Shrimp Fritters paired with a spicy Cajun Remoulade is an amazingly simple dish to make, but it always impresses. See the recipe below.
Shrimp Fritters
1 pound of large shrimp cleaned (peeled and deveined) cut into medium size pieces
1 tablespoon chopped garlic
1/2 cup chopped onions
Your favorite Cajun seasoning
1 tablespoon chopped parsley
2 tablespoons vegetable oil
1 teaspoon salt
2 teaspoons baking powder
3 1/4 cups flour
1 1/2 cups milk
3 eggs beaten
Vegetable shortening (enough to allow for deep frying in your pan of choice)
Heat the vegetable oil in a pan and saute the onions and garlic. After a few minutes, add the shrimp and season with your favorite Cajun seasoning. When the shrimp turn pink, remove from the heat and set aside.
Make the batter by combining the eggs, milk, baking powder, salt, 1/2 teaspoon of Cajun seasoning. Mix gently. Add the flour a bit at a time while incorporating it into the mixture. When the batter is smooth, add the parsley and fold in the shrimp.
In a deep pan, melt the shortening and heat until 350-365 degrees. Using a table spoon, drop heaping lumps of the shrimp batter into the oil. Without crowding the oil, brown the fritters evenly by turning with a slotted spoon. When they are golden brown, removed and drain excess oil on paper towels. Let the fritters cool, then serve with the Cajun Remoulade
Cajun Remoulade
2 cups mayonnaise
2 tablespoons ketchup
2 tablespoons spicy mustard (cajun, stone ground, spicy brown)
2 tablespoons chopped fresh parsley
1 teaspoon cayenne pepper
2 tablespoons fresh lemon juice
2 teaspoons prepared horseradish
2 tablespoons chopped garlic
1 teaspoon Worcestershire sauce
1 teaspoon paprika
1 teaspoon celery salt
1/4 teaspoon Tabasco sauce
Cajun seasoning to taste
Mix all ingredients and add additiobal Cajun seasoning as needed. Serve with Shrimp Fritters. Can also be made several hours ahead and chilled for service.
