1 x SPECK OF SALT
CRUMB TOGETHER THE FLOUR, SUGAR AND BUTTER. TAKE OUT 1/2 CUP FOR TOPPING. ADD MILK TO REMAINING FLOUR MIX
ADD OTHER INGREDIENTS AND MIX WELL. PLACE IN GREASED 9 X 13 PAN. SPRINKLE TOPPING OVER THE TOP. BAKE AT 350 DEG F FOR 40 MINUTES. SERVE FROM BAKING PAN, HOT OR COLD.

TORTA AL CIOCCOLATO
Ingredienti:
Tortiera da 18 cm
Farina di Avena 100 gr
Farina di Riso 50 gr
Cacao Amaro in polvere 30 gr
Uova Bio 4
Yogurt bianco senza lattosio 150 gr
Zucchero di cocco 50 gr
Cocco Rapè 50 gr
Cremor Tartaro 1 bustina
Bicarbonato 1 cucchiaino raso
Nocciole q.b.
Procedimento:
Preriscaldare il forno statico a 180°. Spezzettare grossolanamente le nocciole. In una ciotola aggiungere le 4 uova e iniziarle a montare con lo zucchero di cocco. Aggiungere poi lo yogurt e continuare a montare. Aggiungere le 2 farine, mescolare e poi il cacao in polvere, mescolare bene e creare un impasto omogeneo. Infine versare all’impasto il cocco rapè. Mescolare con una frusta elettrica per far incamerare aria all’impasto, deve essere spumoso. Infine aggiungere il cremor tartaro con il bicarbonato per farlo lievitare e dare un ultimo colpo di frusta per miscelarlo. Versare l’impasto nello stampo, cospargere la superficie con le nocciole spezzettate ed infornare per 30 - 40 min. Controllare la cottura con uno stecchino!

Cake:
3 eggs
1.5 cups granulated sugar
1/2 cup packed brown sugar
3/4 cup butter softened
1 teaspoon vanilla
2 cups all-purpose flour
16 oz fresh cranberries sliced in half
zest of 1 orange
Crumb Topping:
3/4 cup all-purpose flour
6 tbsp. packed brown sugar
6 tbsp. butter
Orange Glaze:
1 cup powdered sugar
Juice from 1 orange about 4 tsp.
Instructions
Preheat oven to 350 degrees. Using a stand mixer, beat the eggs with the sugars about 5 minutes. It should be thickened and about double in size. Add the butter and vanilla; mix about two more minutes. Stir in the flour until just combined. Add the cranberries and orange zests and fold in till completely combined. Spread batter into a greased 13x9 pan.
In a small bowl, combine crumb topping ingredients with fork until coarse crumbs form. Spread over batter. Bake for 40-50 minutes until a toothpick inserted in center tests done. It should be a golden brown. Mine took about 44 minutes to cook.
Let cool completely. Then combine glaze ingredients and drizzle over cooled cake.
