How To make Easy Cinnamon Strips
1 c Sugar
1 c Margarine or butter -- softened
1 ea Egg yolk
2 c All-purpose flour
1/2 ts Ground cinnamon
1 ea Egg white
1 tb Water
1/2 c Walnuts -- chopped very fine
Heat oven to 350 degrees. Lightly greas jelly roll pan (15 1/2x10 1/2x1). Mix sugar, margarine and egg yolk in large bowl. Stir in flour and cinnamon. Press in pan. Beat egg white and water until foamy; brush over dough. Sprinkle with walnuts. Bake 20 to 25 minutes or until very light brown. Immediately cut into about 3x1 inch strips. Cool on wire rack. MINI CINNAMON ROLLS:
- 280g ( 2 cups ) Self Raising Flour ( OR all purpose flour + 3/4 tsp baking soda)
- 200 g ( 7 ounces ) Sweet Yogurt ( or any type of plain yogurt + 2 tbsp sugar)
- 80 g ( 3/4 stick ) Softened Butter
PLEASE NOTE: They are not supposed to rise like traditional yeast-raised cinnamon rolls - see the video for more details. Bake the mini rolls for only 4-5 minutes!
Filling:
- 30-40 gr Butter ( 2-3 tbsp )
- 100 gr Brown Sugar ( 1/2 cup)
- 1 tbsp Cinnamon
- 1/2 tbsp Corn Starch
- 1/4 tsp Salt
Cream Cheese Glaze:
- 100 gr Philadelphia Cream Cheese ( 1/2 cup Cream Cheese)
- 40 gr Powdered Sugar ( 1/3 cup)
- 1 tsp Vanilla
- Splash of Milk ( Start with 2 tbsp and adjust to your liking. For a thinner glaze add more milk)

After making the pretzel bites I wanted to see how something bigger would turn out! So behold ????
These are kind of half doughnut-half pretzel, slightly chewier than a doughnut, but without the crust of a pretzel ???? and absolutely delicious!!

All you need is:
Dough:
180g Greek yoghurt
150g self raising flour
Egg wash (whisk together with a fork):
1 egg
1 tbsp water
20g melted butter
Cinnamon sugar:
70g granulated sugar
1 tsp cinnamon
Bake 160C 10-15 mins until light brown on top. The longer you cook them for, the chewier/more pretzel like they will be ????

Easy Cinnamon Sticks | Keto Baking | Low Carb Dessert |
I made these sweet treats, sugar-free cinnamon sticks. This is a quick low carb dessert. If you love cinnamon buns you'll love this.
There is a lot to play around with here.
Use baking powder and apple cider vinegar for a leavening agent. Or whip some egg whites instead! If someone can make these with yeast, you're a keto god.
Baking them for just 10 minutes so they stay all nice and dough-y inside or more until golden like a cookie.
For the sweetener think Swerve, Pyure (at half the amount) and xylitol.
Ceylon Cinnamon:
The microplane to grind cinnamon sticks:
Anyways this is how I made them.
Cinnamon Sticks:
Dry:
1 cup Almond Flour
1/4 cup coconut flour
2 tbs baking powder
1/2 tsp kosher salt
1 tbsp Psyllium Husk
Wet:
1 med Egg
2 tbsp warm water
1 tbsp apple cider vinegar
Glaze:
2 tbsp butter
Sweeter (to taste)
Cinnamon (to taste)
1) In a large bowl, combine and mix dry ingredients before slowly adding and mixing all the wet ingredients
2) The dough should form a ball. Cut into 1/8 sections and roll into sticks. flatten creating a ditch for the glaze to sit in.
3) Cover in glaze
4) place in oven until the desired doneness is reached. Enjoy!

Fluffy Cinnamon Bread Sticks with Dipping Sauce

Soft and fluffy cinnamon bread sticks rolled in cinnamon sugar with dipping sauce that take so much less time than traditional cinnamon rolls.

Ingredients:
1¼ c unbleached flour
¼ ts fine salt
1 tb sugar
1½ ts intant yeast
½ c warm water {mine was at 110 degrees}
2 tb melted butter
Cinnamon sugar: 2 tb sugar + 2 ts cinnamon
Icing: 1 c powdered sugar + 1.5 tb whole milk
Instructions:
In a medium bowl, whisk the flour, salt and sugar together.
Add the yeast and water. If your water is too hot, it will kill the yeast.
Mix with a mixer or by hand. If mixing by hand, the dough is ready when it sticks to itself and becomes smooth and supple {or about 15 minutes later}. You may use 2-3 tb of extra flour if it's too sticky but no more.
Set a kitchen towel over the bowl and allow the dough to rest in a dark place undisturbed for 30 minutes.
After resting, tear off pieces of the dough and shape into desired forms. Bake on parchment/silpat at 450 for 6-8 minutes.
Brush with melted butter and toss in cinnamon sugar.
For the icing, whisk the powdered sugar and milk together. Add vanilla if desired.
