Mexican Fiesta Casserole

Here's the recipe:
ingredients
2 teaspoons cooking oil
1 pound ground beef
1 cup finely chopped onions
1 cup finely chopped zucchini
1 tablespoon of diced green chilis (or diced jalapeno for heat)
1 envelope (1 1/4 ounces) low-sodium taco seasoning or make your own. See how at:
2/3 cup corn kernels
2/3 cups water
1 cup canned black beans, rinsed and drained
2 cups jarred salsa
8 (6-inch) corn tortillas
2 cups shredded reduced-fat Mexican cheese blend
1/4 cup sliced scallions (green parts only)
sour cream for serving
preparation
1. Preheat the oven to 350°F. Spray a 9 by 13-inch baking dish with cooking spray.
2. In a large skillet, heat the oil over medium-high heat. Add the beef and cook until browned, 5 to 7 minutes. Stir in the onions and zucchini and cook until tender, about 5 minutes. Stir in the taco seasoning, 2/3 cup water. Simmer until thickened, about 2 minutes, then stir in the black beans and corn.
3. Spread 1/2 cup of the salsa in the bottom of the baking dish. Lay 4 tortillas over the salsa, and spoon half of the meat mixture on top. Cover with 3/4 cup of the salsa and 1 cup of the shredded cheese. Top with 4 more tortillas, the other half of meat mixture and the remaining 3/4 cup salsa. Scatter the remaining 1/2 cup shredded cheese over the top.
4. Bake the casserole until the cheese is melted and bubbling, about 25 minutes. Cool, slice and serve, topped with scallions and sour cream.

Fiesta Chicken Casserole
Hello everyone, today I will show you how to make a dish call Fiesta Chicken Casserole.
Very simple and easy !
Ingredients needed are:
Fiesta chicken casserole
• 2 cups uncooked spìral pasta
• 1 cup sour cream
• 1 cup salsa
• 1 teaspoon cumìn
• 1 teaspoon garlìc powder
• 1 teaspoon onìon powder
• 1 can (15 oz) corn (draìned)
• 1 can (15 oz) black beans (draìned & rìnsed)
• 2 cups cooked shredded/chunked chìcken
• 2 cups shredded cheese
1. Heat oven to 350 degrees. Prepare a 9x13 bakìng dìsh and spray wìth cookìng spray. Set asìde.
2. Cook pasta accordìng to package dìrectìons. Don't forget to salt the pasta water. I use about 1 teaspoon salt.
3. Whìle pasta ìs cookìng, combìne sour cream, salsa, cumìn, garlìc powder, and onìon powder ìn a large mìxìng bowl.
4. Draìn the pasta when ìt's done cookìng and add ìnto the sour cream mìxture. Stìr to combìne. Add ìn the corn, black beans, chìcken, and 1 cup of the shredded cheese. Stìr together to combìne.
and finally bake for 20 minutes or until cheese is melted.
