How To make Fig Jam Muffins
JAM:
1 c California dried figs
2 c Cold water
1 c Granulated sugar
Salt 1/4 ts Cloves
BATTER:
2 1/2 c Sifted all-purpose flour
4 ts Baking powder
1 ts Salt
2 tb Granulated sugar
6 tb Shortening
3/4 c Milk
2 Eggs
For Jam: Rinse and drain figs. Clip stems and grind or chop figs fine. Add water, bring to boil and cook and stir about 15 minutes or until water is absorbed. Add sugar, salt and spice. Cook and stir until of thick conserve consistency -- from 7 to 10 minutes. Sift together flour, baking powder, salt and sugar. Work shortening into flour mixture. Add milk and beaten eggs, stir to blend. Divide batter into 12 medium-sized greased muffin tins. With a spoon, make a "well" in top of each muffin. Fill each "well" with spoonful of jam. Bake in hot oven (425 F.) about 18 minutes. Serve hot with butter and remaining jam. Are you ready to whip up some pecan fig muffins?
These are great for the holidays, after-school snacks, or just about anytime you want to feed your sweet tooth.
I love figs because not only are they tasty but they are also highly nutritious. Figs are also one of the 7 foods in the Promised Land and a food mentioned in the Bible
So, if you’re ready to whip up this fig dessert recipe, let’s get started!
Pecan Fig Muffins Ingredients:
2 1/2 cup of hard red wheat flour (or white flour, which is lighter and fluffier)
Baking powder, baking soda, salt, Chinese 5-spice
2 cups fresh figs
2 large eggs
1 tbsp vanilla
1 cup organic apple juice
1 cup roasted pecans
Mix the dry ingredients first.
Be sure your dry ingredients are thoroughly mixed. Mix your wet ingredients with a blender
Then, mix them with your wet ingredients. Mixing your ingredients is more fun with a fiskie!

This is a sugar-free fig recipe, like I said. But if you want it to have a bit more sweetness, you can sprinkle some cinnamon and sucanat powder.

Today I brought a vegan gluten-free muffin recipe using fig jam.

For soymilk, I use 128g, but you should adjust it depending on the flour and raw sugar you use. Please check the density of the dough in the video.
I baked it 180°C(356°F) for 20 minutes and it came out crispy on the outside and moist on the inside.
Depending on the oven you use, you may need to adjust the baking time, so check in the middle and you'll have a more delicious muffin :)
