1 Doz. large oysters seasoned flour beaten egg soft bread crumbs frying fat tartar sauce Pick over the oysters carefully, pat dry in a soft cloth, then roll in seasoned flour (flour to which a little salt and pepper have been added). Dip in beaten egg, then in crumbs. This dipping may be repeated a second time if desired and all loose crumbs should be shaken off. Fry golden brown in deep hot fat (375 degrees) using a frying basket and frying not more than 4 oysters at a time. Drain on soft crumpled paper toweling and serve with tartar sauce. Serves four. For Philadelphia Fried Oysters: Dip first into mayonnaise, then into crumbs after which dip them in beaten egg and crumbs and fry them in hot deep fat.

Fried Oysters with Michael's Home Cooking
This is a great way to start out a meal with this appetizer. Fried Oysters are a favorite of mine. I make an avocado dipping sauce. If you are not into the avocado sauce, the oysters are excellent on a tossed green salad or with cocktail sauce or tartare sauce.
Ingredients: 2 avocados 1 teaspoon lemon juice 1 teaspoon cajun seasoning 1 teaspoon hot sauce 1 minced garlic clove 1/4 cup sour cream 1/4 cup mayonnaise 1 teaspoon Worcestershire Sauce
2/3 cup all purpose flour 2/3 cup corn meal 1/2 teaspoon salt 1/4 teaspoon pepper
Oil for frying
Fry oysters for 3 minutes total time @ 350F in the hot oil.

RECIPE: Start with a 16 oz tub of oysters, drain and rinse well. Cover with half and half or butter milk, add at least 1 tbsp. hot sauce. Refrigerate over night or at least 8 hours.
The next day drain off excess milk but do not rinse with water.
Dredge in a mixture of: 2 cups all purpose flour 1/2 cup corn starch 1/2 tsp. salt 1/2 tsp. pepper 1/4 tsp. Cajun seasoning
Deep fry in 350 degree oil for 2 minutes or until golden brown. Drain on paper towel for 3 to 5 minutes before serving.
Make a dipping sauce with 1/2 cup ranch dressing and 1 tsp. sriracha sauce. Mix with your finger! Lol
