FROZEN LEMON CREAM YOGURT PIE
I have fond memories of making frozen yogurt cream pies many many years ago. I decided to use an old recipe and tweak it WW style for lower points but still tasty and delicious. I still have quite a few lemons from my lemon tree so I decided this would make a nice lemon dessert. This pie makes 6 nice size slices at 2 WW blue points each (crustless). If you decide you want to add a crust then try the low point crust recipe I make with Kellogg’s Bran Buds. If you use this crust then add 1 extra point per slice. The old frozen yogurt cream pie recipe I had from many years ago has 15 points per slice (and I used to think I was dieting and being a good girl when I made this years ago, no wonder I kept gaining weight instead of losing). This revised and healthier recipe tastes just as good for only 3 WW “blue” points with crust, or 2 WW “blue” points if its crustless. You can find the printable bran crust recipe on my website: amusinghealthyrecipe.com. Very easy to make and tastes sooooo delicious. This should be kept in the freezer, not in the refrigerator. This is a very easy and quick recipe. Enjoy!
INGREDIENTS:
• 8 oz Fat Free Cool Whip
• 1 tbsp lemon zest
• 3 tbs fresh lemon juice
• 1 tsp of lemon extract (optional, but adds a tangier lemon taste)
• 15 oz Non-Fat Plain Greek Yogurt (-0- point kind)
• ¾ cup of Swerve or Anthony’s confection powdered sugar (sugar free all-natural sugar replacement).
• Optional: few drops of yellow food coloring
DIRECTIONS:
1. Beat together: confection sugar, lemon juice, lemon zest, lemon extract and yogurt with a hand mixer or use a food processor. You can use a whisk and do this by hand, but it will be a lot of work. Beat until all ingredients are smooth and blended.
2. Add the 8 oz tub of Fat Free Cool Whip and stir or whisk together by hand until well blended. Pour into pre-baked “and chilled” *1 WW point bran pie crust or you can just pour it into the pie pan if you want a crustless pie. Put the pie in the freezer and let it chill for an hour before serving. It will be a soft lemon cream not frozen at this time. Keep the pie in the freezer overnight until you are ready to eat. Take it out and let it set for a few minutes before serving.
3. Optional: Garnish with some Fat Free Redi-Whip or Light Redi-Whip spray topping. Sprinkle a little bit of lemon zest on top. Enjoy!
4. THIS PIE DOES NOT NEED A CRUST, IT TASTES SO GOOD CRUSTLESS, next time I’m going to make it crustless and save a point and time.

Easy Delicious Lemon Pie with Whipped Creme
Today, I'm making an easy, delicious, and creamy lemon pie. I'm still trying new desserts for this coming spring.
Pie Crust
1&1/2 c of Graham cracker crumbs
1 Tbls brown sugar
2 Tbls granulated sugar
7 Tbls melted butter
preheat oven to 350°
Mix and press into pie dish. Bake for 10 minutes. allow to cool
Filling
5 egg yolks
2 cans sweetened Condensed Milk
1 cup lemon juice
zest of Lemon (Optional)
mix and pour into pie shell. bake for 15 to 18 minutes. Cool on counter, then chill in refrigerator.
Whipped Creme
2 cups heavy whipping cream
1/2 c powdered sugar
1.5 tsp vanilla
whip in stand mixer until fluffy and to your desired consistency

small can of condensed milk
1 can of frozen lemonade
store bought gram cracker pie crust
Blend all 3 ingredients and pour into pie crust
Freeze for at least 1 hour
