How To make Garden Vegetarian Chowder
1 ts Butter or vegetable oil
1 c Carrot; diced
1/2 c Onion; chopped
1/2 c Celery; chopped
1/4 c Sweet green pepper; chopped
1 cl Garlic; minced
1/2 ts Salt
1/2 ts Pepper
3 c Potatoes; peel,dice
2 c Rutabaga; peel, dice
2 1/2 c Vegetable or chicken stock
1/2 c Zucchini; diced
1 c Corn niblets
1 cn Evaporated milk (385mL)
2 tb Dill; fresh, chopped
Use 2% evaporated milk for additional nutritional benefit. Serve for lunch or supper with Yogurt Cheddar Scones (see recipe) In large heavy saucepan, melt butter over medium-low heat; cook carrot, onion, celery, green pepper and garlic, stirring, for about 5 minutes or until softened. Stir in salt and pepper. Add potatoes and rutabaga; pour in stock and bring to boil. Reduce heat and simmer gently for 8 minutes or just until vegetables are tender. Add zucchini; cook for 5 minutes. Add corn and milk; heat through. Serve with garnish of dill.

Canning Garden Veggie Soup
Today's veggie soup is a hodge podge of everything that is currently coming out of my garden. I didn't have enough to do much with, so I decided to throw it all together, add some herbs and water, and call it soup!
Canning soup is easy peasy! It does take a while to cut up all of the vegetables but the end results are entirely worth it! Don't let your hard work ruin on the counter! ;)

►INGREDIENTS:
4 large potatoes medium chopped
3 large carrots medium chopped
3 medium celery stalks medium chopped
3 cups bell peppers medium chopped
2 medium zucchini medium chopped
1 medium onion finely chopped
2 cups corn fresh or frozen
6 cups vegetable stock low sodium
28 oz can diced tomatoes low sodium
3 bay leaves
1 tsp smoked paprika
1 tsp dried oregano
1 tsp garlic powder
3/4 tsp salt
Ground black pepper to taste
1 tbsp avocado oil
1 medium garlic clove grated
1/3 cup dill or parsley finely chopped
Parmesan cheese and yogurt for garnish

►DIRECTIONS:
1. Preheat large dutch oven or large pot on medium heat, swirl a bit of oil to coat and add onion. Cook for 3 minutes, stirring occasionally. Add smoked paprika, oregano, garlic powder, salt, pepper and bay leaves; cook for 1 more minute, stirring frequently.
2. Add potato, carrot, celery, pepper, stock and diced tomatoes; stir. Bring to a boil, cover and reduce heat to low and simmer for 25 minutes or until potato is fork tender.
3. Add zucchini and corn, cover and simmer for 5 more minutes. Turn off heat, add grated garlic and dill.
4. Serve hot garnished with Parmesan cheese and yogurt.
