How To make Garlic Olives
2 c Canned green olives; drained
2 Garlic cloves; slivered
3 sl Lemon (thin slices)
1 ts Black peppercorns
3 Bay leaves
Whole sprigs dried thyme -OR- Basil -OR- oregano -(optional) 1/4 c Sherry or vinegar
Olive oil Combine olives, garlic, lemon slices, peppercorns, bay leaves, sprigs of thyme and sherry in jar. Add oil to cover. Marinate at least 24 hours or overnight to blend flavors. Makes 2 cups (C) 1992 The Los Angeles Times

Our friend, Jerry James Stone, shares a quick and delicious pasta recipe: Lemon Garlic Butter Pasta with Green Olives. (Recipe Below) This quick pasta is loaded with flavor and California Grown goodness!

Here's how to make Lemon Garlic Pasta with Green Olives at home:
INGREDIENTS
8 tablespoons butter divided
¼ cup panko breadcrumbs
3 cloves chopped garlic
¼ teaspoon red pepper flakes
1 tablespoon lemon juice
1 teaspoon lemon zest
½ cup sliced green olives
½ pound pappardelle cooked per package instructions
1 tablespoon chopped parsley
Salt and pepper to taste
INSTRUCTIONS
Melt 1 tablespoon butter over a medium heat.
Add ¼ cup panko breadcrumbs to a large saute pan and mix to fully coat in the melted butter. Cook for a couple of minutes until breadcrumbs are a rich golden brown. Careful not to burn.
Remove breadcrumbs from the pan.
Add the remaining 7 tablespoons of butter to the pan and melt over a medium low heat. Add in 3 cloves chopped garlic and saute for about a minute, until aromatic. Add in 1 tablespoon lemon juice and 1 teaspoon lemon zest. Saute for another minute.
Add ½ cup sliced California green olives and saute for 1 minute.
Toss green olive and butter sauce with ½ pound pappardelle that has been cooked per package instructions. Make sure pasta is fully coated.
Top off pasta with toasted breadcrumbs and 1 tablespoon chopped parsley.
Salt and pepper to taste.

Garlic & Herb Roasted Greek Olives with Burrata ???? This is the perfect holiday appetizer or fancy game day snack hack — get the recipe below:
Ingredients:
(Serves 8)
6 cloves garlic, smashed
1 shallot, quartered
1 lemon, quartered
2 sprigs fresh thyme
2 sprigs fresh oregano
2 cups mixed olives, pitted
1/3 cup extra-virgin olive oil
2-3 tablespoons honey
3-4 balls burrata cheese, at room temperature
Fresh basil and or oregano, for serving
Chili flakes
Black pepper
Instructions:
1. Preheat the oven to 450° F. In a baking dish, combine the olives, olive oil, garlic, shallot, lemon, thyme, oregano, and a big pinch of chili flakes. Bake for 20-25 minutes, until the garlic turns golden and the oil is sizzling.
2. Dab the burrata dry of any liquid. Pull the olives out and break the balls of burrata over the oil. Nestle the burrata into the hot oil. Let sit 5 minutes, then top with honey, black pepper, and herbs.
3. Serve with toasted bread. I love using a garlic ciabatta loaf.
