1/3 c Brown sugar, packed
1/2 c Molasses
1/4 c Vegetable oil
1/2 c Buttermilk
1 1/2 c All-purpose flour; u

1 ts Baking powder
1 ts Baking soda
1 ts Ground cinnamon
1 ts Ground ginger
1/4 ts Salt
3/4 c Raisins
Recipe by: The New Dr. Cookie Cookbook Preheat oven to 350 degrees; coat 2 cookie sheets with nonstick cooking spray. Beat the egg, brown sugar, molasses and oil with an electric mixer until smooth. Add the buttermilk and beat again. Add the flour, wheat germ, baking powder, baking soda, cinnamon, ginger and salt; beat until well mixed. Stir the raisins into the batter. Drop the batter by rounded teaspoonfuls about 2 inches apart onto the cookie sheets and bake for 12 to 14 minutes, or until the cookies are lightly browned. Cool on wire racks. Repeat until all of the cookies are baked. -----

Gingerbread cookies are such a treat. If there’s any bad wrap to them it’s because of those box kits for gingerbread houses with stale pieces inside. For the best results you just have to bake your own. There is a lot of molasses in this recipe so it really requires overnight chilling to set, which just means a little planning ahead. I really liked the spice profile of this recipe but you can play with it and add more of your favorites and eliminate the one’s you dislike.

600g flour
250g powdered sugar
40g cocoa

2 tsp gingerbread spices (if not available add ground cinnamon and ginger)
150g honey
50g butter
4 eggs

4 drops of lemon juice

How to make Gingerbread men recipe
Making gingerbread is a fun cooking activity you can enjoy with kids of all ages. Make this simple dough, roll it out and then let your kids do the rest of the work. Stock media provided by sweetwaveaudio/pond5.com
Ingredients:
125g butter, softened
1/2 cup brown sugar, packed
1/2 cup golden syrup
1 egg, separated + I egg white, extra
2 1/2 cups plain flour
1 tbsp powdered ginger
1 tsp mixed spice
1 tsp bicarbonate of soda
2 cups icing sugar
150g packet Smarties or chocolate buttons to decorate
Preheat oven to 180°C (160°C fan-forced).
Cream butter and brown sugar together using an electric beater, stand mixer or food processor.
Add egg yolk and golden syrup and mix until combined.
Add flour, ginger, mixed spice and bicarb soda and combine. It might look a bit crumbly, but don't worry - it works!
Place onto a piece of baking paper and then cover with another piece of baking paper – using a rolling pin, roll out the dough and cut out with desired shapes (kids can help here) re-roll as needed, but keep using the baking paper.
Move the cut shapes over to greased baking trays with a spatula/egg flip and bake for 8-10 minutes.
Once baked, let cool for 10 minutes on the tray and then transfer to cooling rack.
To make the icing, beat the 2 egg whites until they are stiff peaks, add the sifted icing sugar and combine with a few drops of lemon juice. Place into a piping bag and decorate the gingerbread men with the icing and the smarties.
