Instant Christmas Fruit Cake | Last Minute Plum Cake | No Soaking, No Alcohol | ക്രിസ്തുമസ് കേക്ക് |
Want to make a Plum cake instantly, still without compromising the flavours & aromas of a Christmas fruit cake. It is so easy that you can even mix all the ingredients in a food processor and just mix in the dried fruits by hand.
It is also called an Everyday fruit cake because it's tasty, quick and easy. You don't have to wait for Christmas to make this as this can be a perfect snack cake/tea cake too.
INGREDIENTS
Unsalted butter - 125 gm, room temperature
Light /dark brown sugar - 125 gms ( 1 cup , loosely packed)
Eggs - 3 large, room temperature
Milk - 60 ml , 4 Tbsp
Jam (any Flavor) - 1 heaped Tbsp. ( can substitute with honey, orange marmalade)
All purpose flour - 250 gm (2 cups + 2 tbsp)
Mixed spice powder - 2 tsp ( (I used 1 tsp cinnamon powder, 1/2 tsp cardamom powder, 1/4 tsp ground cloves, 1/4 tsp ground nutmeg.You can also add 1/4 tsp ground ginger if you like.)
Vanilla essence - 1/4 - 1/2 tsp , optional
Dried fruits - 400 gms ( I used 150 gms black seedless raisins, 100 gms tutti frutti, 25 gms candied cherries, 100 gms chopped dates,25 gms chopped cashews)
METHOD
- Prepare a loaf pan by applying butter and lining with parchment paper.
- Mix together the butter, brown sugar, milk, eggs, vanilla essence , jam. Use a wooden spoon or whisk to mix the ingredients. It's ok if the butter is not fully incorporated.
- Add in the all purpose flour, baking powder, mixed spice powder followed by dried fruits.
- Transfer the batter into the baking pan and level. Make a slight depression in the center using a spatula so that the cake doesn't dome up too much.
- Bake in a 170°C(325°F) preheated oven for approx. 1 hr 15 mins or more.It take upto 1 hr 45 mins . The time will vary according to the size of the pan. A skewer inserted in the center of the cake will come out clean when done.
- Cool in the pan for 10 mins, then remove from the pan and cool completely before slicing.
NOTE
- You can also do all the mixing (liquid and dry) in a food processor or using a beater but make sure to mix in the dried fruits by hand.
- Other options for dry fruits are prunes, golden raisins,any nuts, dried pineapple,candied orange peel etc.
- I have used light brown sugar because i prefer that. You can also use dark brown sugar,but it may give a strong taste.

RECIPE
Ingredients:
• 700g Raisins
• 1050g Sultanas
• 60g Mixed Peel
• 60g Cherries
• 350g Currants
• 4 tbsp Rum
• 4 tbsp Sherry
• 500g Norco unsalted butter (softened)
• 500g Brown Sugar
• ½ tspn Salt
• 10 Eggs
• 2 tbsp Vanilla Essence or 1 tbsp Vanilla Extract
• 1 tbsp Lemon Essence
• 2 tspn Coffee Essence
• 1 tbsp Treacle
• 60g Self-Raising Flour
• 600g Plain Flour
• ½ tspn Ground Cloves
• 2 tspn Mixed Spice
• Juice of 1 Orange
• 120g Blanched Almonds (optional)
• Norco Custard (to serve)
Utensils:
• 3 large bowls
• wooden spoons
• electric beater
• 25-28cm square tin
• newspaper
• string
• cardboard
• tea towels
Method:
1. Soak Fruit Overnight
Cut raisins, sultanas, mixed peel and cherries into equal parts. Add cut fruit and currants in a large bowl. Add rum and sherry over the fruit and mix well. Cover with plastic wrap and leave to soak overnight.
2. Combine butter, sugar and salt into a large bowl. Beat with electric beaters or similar until creamy.
3. Add eggs one at a time, beating well after each egg.
4. Add vanilla, lemon essence, coffee essence and treacle to butter mix. Beat well.
5. In a separate bowl, combine flours, ground cloves and mixed spice.
6. Add orange juice and almonds (optional) to fruit mix and almonds. Mix well with a wooden spoon.
Add a bit of the dry ingredients’ mixture (approx 100g) to the fruit mixture. Mix well.
7. Add butter mixture and remaining dry ingredients to fruit mixture. Mix well.
Method
8. Line a 25-28cm square tin with baking paper. Spoon mixture in tin and spread evenly.
TIP: To remove air bubbles, spoon the mixture into the corners first before filling the rest of the tin. Additionally, drop the tin on the floor or a table a few times.
TIP: Using a wet hand, press down on mixture to make the top even and glossy
TIP: Before placing in the oven, cover the outside of the tin with newspaper and secure with string. Additionally, place cardboard underneath and on top of the tin. This will help the cake cook more slowly and not burn.
9. Bake in a pre-heated oven at 120°C for 4.5 - 5 hours until cooked (check after 4 hours).
TIP: Listen to your cake! If the cake is still sizzling, it has not cooked through and needs to go back in the oven.
10. Wrap in a couple tea towels and leave to cool. Remove cake from tin after it has completely cooled
11. Eat on its own, or with serve with some Norco custard.

I know. That seems simple, but it is true.
A good fruit cake is packed full of delicious fruits, roasted nuts, and beautiful spices.
I found this recipe because I was asked to make a fruit cake, but to be honest, before 2 weeks ago, I had never had one. And I had never had the urge to try one due to all of those horrible fruit cake jokes...
Oh, but how wrong I was. It is nothing like I've ever had before. So delicious, moist, and irresistible.
I followed King Arthur's recipe and it was honestly, spot on. I decided to change a few things to make it perfect for me. For example, take a little sugar out to make it less sweet. Take the pineapple out, because to me, that is not a super Christmas-y fruit (my opinion, yours can be different!). Do half Rum and half apple juice and a few more things here and there, but what is great about this cake is you can alter it to make it prefect for you and make it delicious.
Honestly, you should try this cake if you have not before because you won't regret it!
King Arthur's Recipe -
Ingredients:
Fruit Mix
- 3/4 cup (130 grams) raisins
- 1/2 cup (126 grams) dried apricots – chopped
- 3/4 cup (111 grams) dates – chopped
- 1/3 cup (100 grams) candied red cherries- halved – optional
- 3-4 pieces (30 grams) candied ginger – diced
- 3/8 (46 grams) dark rum (replace with all apple juice when making it kid friendly)
- 3/8 (46 grams) apple juice
Cake:
- Prepped Fruit
- 1/2 cup (113 grams) unsalted butter – room temperature
- 2/3 cup (158 grams) brown sugar
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground allspice
- 1/8 teaspoon ground nutmeg
- 1/2 teaspoon baking powder
- 2 eggs
- 1 1/2 cups (180 grams) all-purpose flour
- 1 tablespoon cocoa powder
- 1/8 cup (40 grams) corn syrup
- 1/4 cup (55 grams) apple juice
- 1 cup (113 grams) mixed nuts – roughly chopped

ORANGE ROLL
Ingredients:
8 Eggs
250g or 1 ¼ cup of Demerara Sugar
1 tablespoon of Corn starch
Juice and Zest of 2 Oranges
Castor Sugar to roll on a wet clean cloth
Preparation:
1. Mix the Sugar with the Corn starch
2. Crack the eggs and add the sugar (with the Corn Starch) and mix without beating
3. Add the juice and zest of the 2 Oranges
4. Pour the preparation into an oven pan lined with baking paper
5. Bake in the oven at 180°C OR 350°F for approximately 20 minutes
6. Once baked, place it in a wet towel sprinkled with sugar
7. Roll it with the help of a cloth and the first sprinkle with Castor Sugar
GOLDEN SWEET EGG THREADS
Ingredients:
12 Egg yolks
250g of Sugar
1 - 1 /2 cup Water
1 tablespoon Vanilla extract
Preparation:
1. Mix the sugar and the water on a pan and bring to a boil and reduce it to medium-low. Add the vanilla Extract
2. Separate the egg whites from the yolks and strain the yolks through to remove the clear thin yolk sac
3. Gently mix the yolks and put them in the three-point funnel (You can win one from me, watch the video to know how)
4. Drizzle the yolks into the sugar syrup in long threads, 5 inches/13 cm
5. Allow cooking for a minute
6. Remove the threads from the syrup with a FORK and placed them into a large sieve to drain.
7. Separate the threads with the fork. As per my taste and preference, I do not rinse the threads with cold water as I enjoy the bright sugary look and flavour
