Israeli Couscous with Pistachios and Apricots:
2 tbsp vegetable oil
3 cloves garlic, minced
2 cups Israeli couscous
2 1/2 cups water
1 cinnamon stick
1 tsp ground cumin
1/4 tsp ground cardamom
several pinches of freshly ground black pepper
1/2 tsp salt
zest from 1 lime
1/4 cup chopped fresh mint
1/2 cup chopped dried apricots, chopped to the size of raisins
1/2 cup shelled pistachios
juice from 1/2 lime

INGREDIENTS:
●3 tablespoons olive oil
●1/4 cup onion (diced)
●1 teaspoon minced garlic paste
●1 cup frozen shrimp (without shells)
●1 teaspoon dried oregano
●1 teaspoon dried parsley
●1 cup cooked couscous (I used my leftover Golden Couscous)
●1 red bell pepper
●2 tablespoons fresh basil (chopped)
●1 tablespoon white pepper
●salad greens, mix
●iceberg lettuce
●blue cheese
●sliced bread (I used walnut bread)

This serves about 4-6 people, for less people half the ingredients.
- 2 cups of couscous.
- 2 chicken stock cubes+500ml hot water. /500ml hot chicken stock.
- 1 small red onion, chopped.
- Red, yellow and green pepper. Half of each, chopped.
- Oil for frying.
- Paprika, about a tsp.
- pepper for taste.

Salt and maggi to taste
Stew
1/2 cup vegetable oil
1 large red onion
1/3 cup serrano pepper
1/2 cup tomato paste
1 cup diced bell pepper
1 cup diced red pepper
2 cups diced tomatoes
1/2 cup parsley
1 cup chopped carrots
1 tablespoon (green seasoning, minced garlic,
onion powder, garlic powder, black pepper, chicken bouillon, paprika)
1/2 tablespoon oregano leaves
1 teaspoon pepper sauce (optional)
Salt and maggi to taste
3 cups couscous
4 cups of water
