Cheesy Chicken Broccoli Bake | Delish
This dish is like broccoli cheddar soup all grown up.
DIRECTIONS
1. In a large skillet over medium-high heat, heat olive oil. Add onion and garlic and cook until fragrant, about 5 minutes. Add chicken and season with salt and pepper. Cook until golden, about 6 minutes more.
2. To the skillet, add rice. Pour in chicken broth and heavy cream and stir to combine. Bring to a simmer and let cook until rice is fully cooked, about 15 minutes. Add more broth if necessary. Mix in broccoli and cheddar and continue cooking until cheese is melted and broccoli is tender.
3. Sprinkle skillet evenly with panko breadcrumbs and season with salt and pepper. Broil until golden and crispy, about 2 minutes.
INGREDIENTS
1 tbsp. olive oil
1 c. diced yellow onion
2 cloves garlic, minced
1 lb. boneless skinless chicken breasts, cubed
kosher salt
Freshly ground black pepper
1 c. white rice
2 c. chicken broth (or more, if needed)
1 c. heavy cream
2 c. broccoli, florets only
1 c. shredded Cheddar
1/4 c. panko breadcrumbs

ANCHOVY PASTA | Spaghetti with Broccolini, Anchovies, and Breadcrumbs
This simple anchovy spaghetti with broccoli and breadcrumbs dish is THE pasta recipe in my arsenal. It's tasty enough to make for friends (and I do often), but quick enough to whip up on a weeknight. If you're nervous about the anchovies, don't be. They're dissolved into a garlicky soffritto that adds a meaty, funky sophistication that you'll want to keep tasting.

FOR THIS DISH YOU WILL NEED
YIELDS 4 PORTIONS
4 OZ. NICE 100% DURUM SEMOLINA SPAGHETTI per person (1 LB for 4 portions)
1 LB BROCCOLINI (4oz per person)
4-6oz GRATED PECORINO or PARMESAN (ROMANO ALSO WORKS)
1-2 TBPS BUTTER per every 4 oz portion of pasta ( ROOM TEMP)
FOR THE SOFFRITTO
10-12 GARLIC CLOVES or about 75g total
3 CANS ANCHOVIES or about 75g
100g OLIVE OIL
5g CHILE FLAKE
FOR THE BREADCRUMBS
a rough 1/4c of OLIVE OIL
a rough 3/4c. of PANKO BREADCRUMBS

Full recipe for Baked vegetables with white sauce
Prep time: 10 mins
Cooking time: 20 mins
Serves: 4
Ingredients:
• Butter 3 tbsp
• Refined flour (maida) 3 tbsp
• Milk 200 ml
• Salt to taste
• Pepper powder a pinch
• Nutmeg powder a pinch
• Processed cheese 200 gm
• Olive oil 1 tbsp
• Carrot ½ cup (diced & blanched)
• Mushroom ½ cup (diced)
• Green peas ½ cup (blanched)
• Sweet corn ½ cup (blanched)
• French beans ½ cup (diced & blanched)
• Capsicum ½ cup (diced)
• Broccoli florets ½ cup (blanched)
• Salt to taste
• Black pepper a pinch
• Oregano 1 tsp
• Red Chilli flakes 1 tsp
Method:
• Heat butter in a pan on medium heat, add flour, stir and cook well ensuring the colour doesn’t changes a lot.
• Add the milk slowly and gradually and keep whisking to avoid lumps.
• Add salt & pepper, nutmeg powder and grate processed cheese, mix well and cook further for 2-3 minutes, make sure the sauce is silky smooth without any lumps.
• Set a wok on medium high heat, add olive oil add the veggies, salt & pepper, oregano and chilli flakes. Sauté for 2-3 minutes, add the freshly prepared white sauce, mix well and cook for 2-3 minutes.
• Pour the veggies with white sauce in a baking dish and grate some processed cheese over it.
• Preheat the oven for 10 mins and bake it at 180°C for 10-12 minutes.
• Serve hot with freshly toasted garlic bread.
For garlic bread
Ingredients:
• Melted butter ½ cup
• Garlic 4 tbsp (chopped)
• Fresh coriander 1 tbsp (chopped)
• Garlic bread 1 loaf
Method:
• Mix the melted butter with finely chopped garlic and fresh coriander leaves.
• Slice the garlic bread loaf diagonally and apply the freshly made garlic butter on the bread slice surface.
• Heat a grill pan or a normal pan on medium heat, toast the garlic bread on both the sides until crisp and golden brown.

✅Ingredients
• 6 cups fresh broccoli crowns
• ½ cup cooked and crumbled bacon (about 6 slices)
• ½ cup diced cheddar cheese
• ¼ cup finely chopped red onion (about ½ a small onion)
• ¼ cup sunflower seeds
• ¼ cup raisins, golden or purple
Sauce:
• 1 cup mayonnaise
• 1 cup plain Greek yogurt
• 3 tablespoons honey
• 1 tablespoon apple cider vinegar
✅Instructions
1️⃣ In a large bowl, combine broccoli, bacon, cheddar, onion, sunflower seeds and raisins and toss to combine.
2️⃣ In a separate bowl, make the sauce. Combine mayonnaise, Greek yogurt, honey and apple cider vinegar together. Whisk or stir ingredients until blended and smooth.
3️⃣ Pour the sauce mixture over top of the broccoli salad and stir until all ingredients get coated.
4️⃣ May serve right away but it is even better if it sits (refrigerated) for 2 hours.
