Rocket Grapefruit and Pomegranate Salad
Hello, Salad Lovers!
Continuing with the sour flavor theme for the spring season to support the organs of elimination at this time of the year - here's a tasty salad combining sweet-sour and bitter tastes to support digestive health.
Grapefruit contains a rich source of lycopene associated with reducing risk of cancer, it also provides a number of beneficial and protective nutrients and plant compounds which have antioxidant properties.
Fresh grapefruit should not be consumed with certain medications, as it has been shown to reduce their breakdown and elimination, which can result in increased blood levels of the drug. These include, but are not limited to, statins, calcium channel blockers, immunosuppressants, and certain cancer medications. Always check with your GP if you're taking prescription medication before consuming grapefruit or grapefruit juice.
Leafy green rocket is rich in chlorophyll and vitamins C, E, B and K. They also contain beta-carotene, as well as lutein and zeaxanthin (for eye health). The bitter taste of rocket and watercress can help to stimulate the digestive juices as well as bile flow from the liver. Bile helps to emulsify and digest fats and helps us digest and absorb vital fat-soluble vitamins such as vitamin A and vitamin E.
Sweet pomegranate has anti-inflammatory effects and can protect the human body from various diseases like type-2 diabetes, and obesity. Regular consumption of pomegranate helps in improving gut health, and digestion, and keeps bowel healthy.

Toss all the ingredients together in a salad bowl and drizzle with olive oil
