10 oz Frozen Chopped Spinach
8 oz Rinsed, Drained, Canned
-Chickpeas 1/4 c Golden Raisins
4 c Cooked Linguine (Hot)
1 tb Olive Oil PLUS
1 ts Olive Oil
1/2 ts Salt (Optional)
1/8 ts Crushed Red Pepper
Yield: 4 Servings In a 2-quart saucepan, cook the spinach according to the package directions. Add the chick-peas and raisins and cook, stirring occasionally, until thoroughly heated, 3 to 4 minutes. Transfer the spinach mixture to a large mixing bowl; add the linguine, oil, salt, and pepper and toss to coat. Each serving provides: 1 Fat; 1 Protein; 1 Vegetable; 2 Breads; 1/2 Fruit. Per Serving With Salt: 450 Milligrams Sodium; 0 Milligrams Cholesterol. Per Serving Without Salt: 165 Milligrams Sodium; 0 Milligrams Cholesterol.

9 ounces (250 grams) pasta fusilli, rotini, elbows, etc.
1 can (15-oz) (240 grams) cannellini beans or chickpeas, rinsed
2 cups (300 grams) red bell pepper diced
1 heaping cup (150 grams) cucumber diced
½ cup (100 grams) corn canned
½ cup (60 grams) olives sliced
1 shallot or red onion, sliced
1 rib celery chopped
½ cup (60 grams) pickles chopped
3 tablespoons parsley finely chopped
2 tablespoons dill finely chopped
¾ cup (160 grams) vegan mayo or regular mayo
½ lemon juice and grated zest
¾ teaspoon salt or more to taste
¼ teaspoon black pepper

There’s a secret to making the most refreshing summertime orzo pasta salad! My secret ingredient is freshly squeezed orange juice. The orange juice gives this salad the lightest most refreshing taste with a hint of sweetness. I encourage you to also add orange zest if you want more citrus in this dish.
This salad has crunch from the veggies, creaminess from the feta, and zest from the orange juice. It is the perfect summer dish.
Whenever I serve this salad on the table I get bombarded with questions on how to make it. Now that you know my secret, please give it a try this summer when you’re hosting or bring it along if you’re being hosted. I promise, this salad will be first to disappear from the table. This recipe is the perfect side for meal-prep and you can make it ahead of time.
INGREDIENTS
one small pack of orzo (340 grams) boiled to al-dente in salted water
¼ cup of olive oil, to taste to taste
½ cup freshly squeezed orange juice
3 finely diced mini cucumbers
2 finely diced tomatoes
½ finely diced bell pepper, to taste to taste
½ of a finely diced red onion I soaked mine in water for 20 minutes to make it milder
½ cup finely chopped fresh parsley to taste
1 tablespoon dry oregano
salt to taste
crumbled feta measure with your heart
olives are optional* I didn’t have any on hand
