Potato Basil Frittata
RECIPE COURTESY OF INA GARTEN
Level: Intermediate
Total: 1 hr 20 min
Prep: 20 min
Cook: 1 hr
Yield: 8 servings
Ingredients
8 tablespoons (1 stick) unsalted butter, divided
2 cups peeled and 1/2-inch diced boiling potatoes (4 potatoes)
8 extra-large eggs
15 ounces ricotta cheese
3/4 pound Gruyere cheese, grated
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3/4 cup chopped fresh basil leaves
1/3 cup flour
3/4 teaspoon baking powder
Directions
Heat the oven to 350 degrees F.
Melt 3 tablespoons of butter in a 10-inch ovenproof omelet pan over medium-low heat. Add the potatoes and fry them until cooked through, turning often, about 10 to 15 minutes. Melt the remaining 5 tablespoons of butter in a small dish in the microwave.
Meanwhile, whisk the eggs, then stir in the ricotta, Gruyere, melted butter, salt, pepper, and basil. Sprinkle on the flour and baking powder and stir into the egg mixture.
Pour the egg mixture over the potatoes and place the pan in the center of the oven. Bake the frittata until it is browned and puffed, 50 minutes to 1 hour. It will be rounded and firm in the middle and a knife inserted in the frittata should come out clean. Serve hot.

Ham and Cheese Quiche | Tiffany's Grub Box
I love quiche! They are fairly simple to make and are very versatile.
Here is how you make this one:

Blind bake a deep dish pie crust (I used a store bought one) in an oven preheated to 375F for 10 minutes.
In a frying pan, medium-high heat, add
1 tbsp Butter
1 diced medium Onion
2 cloves chopped Garlic
1/2 cup sliced Mushrooms
cook until onions are translucent and mushrooms have browned. Remove from heat.
In a large bowl, beat
4 Eggs
then add,
1 cup Heavy Cream (you just committed to 4 Eggs, don't worry about the fat in the cream)
1 tsp Basil
1 tsp Oregano
Salt and Pepper
stir in,
fried mushrooms and onions
1 cup Ham cubed
1 cup shredded Cheese
pour filling into crust (may or may not be over filled, depends on pie plate depth)
top with quartered mini tomatoes (or decoration of choice)
bake for 40-45 minutes (oven still preheated to 375F) until set (no longer wiggly in the middle)
Mine ALWAYS spills over, so I make sure to bake with a cookie sheet under the pie plate. This is easy to clean off of the cookie sheet (you can just pluck it off when it cools) but is a real pain to clean the oven if you don't use the cookie sheet.
