Yellow Squash Casserole
(vegetarian)
Ingredients:
2 pcs med size summer squash, sliced
1 med size onion, chopped
1 celery stalk, chopped
2 cloves garlic, minced
6 large Bella Mushrooms, sliced
4 tbsp plant-based butter
1/2 cup all purpose flour
1 tsp Himalayan pink salt
1 tsp Mushroom Granules
1/2 tsp ground Blackpepper
1/4 cup homemade vegetable broth
handful cheese (of your choice, plant-based prefered)
a dash of parsley flakes
Sauté Onion, Celery in butter until translucent and then add the garlic, and mushrooms, let it cook covered in medium high heat, stirring occasionally. Add the flour until fully incorporated, and then, add the squash and let it sweat until partially cooked. Add the seasonings and a little bit of broth, transfer to the oven safe container, covered with cheese, and parsley, baked uncovered at 400F for 20-35 minutes until bubbles and the cheese is slightly brown.

Urad dal - 1/2 cup

Red Chilli Powder 1/2 tsp
Coriander Powder 1/2 tsp
Ginger - 1 inch baton
Green Chilli - 2-3
Salt - slightly more than 1 tsp

This breakfast casserole recipe is easy, delicious, and best enjoyed on Christmas morning. This breakfast recipe is made with sour dough bread and sage breakfast sausage. Full recipe in description.
Breakfast Casserole
Equipment
9 x 13 Baking Dish
Baking Sheet
Mixing bowl
Cheese Grater
Whisk
Ingredient
1lb (16oz) - Bread (We used sourdough).
1lb (16oz) - Breakfast Sausage (Sage, Hot, or Mild).
12 - Large Eggs.
3 Cups - Cheese (We Used Cheddar Cheese & Gruyere).
2 Cups - Whole Milk.
1 tsp - Mustard Powder.
1 tsp - Salt (Fine ground Sea Salt or Himalayan).
1/2 tsp - Onion Powder.
Pinch - Cracked Black Pepper.
Butter or cooking spray (To Grease Baking Dish).
Directions
1. Take bread and cut it into similar sized chunks. **To dry out bread, layer evenly onto baking sheet and bake for 8 minutes in a 350 degree oven.**
2. Fully cook and crumble breakfast sausage.
3. Grease the baking dish (bottom and about half way up the sides).
4. Crack 12 eggs into mixing bowl, pour in two cups of whole milk, and all spices.
5. Whisk egg mixture thoroughly.
6. Place bread in baking dish.
7. Add sausage and cheese on top of the bread.
8. Pour egg mixture evenly across casserole.
9. Add a few pinches of cracked black pepper on top of casserole.
10. Cover with foil and place in fridge for a minimum of two hours (best if allowed to set overnight).
11. Bake uncovered at 350 degrees for 40-50 minutes.
12. Once casserole has risen and cheese has melted, take a toothpick and check multiple spots for doneness (if toothpick comes out clean the casserole is done).

▶️ RECIPE INGREDIENT LIST: (3 to 4 servings)
500g Cauliflower - 1 small cauliflower - 4 to 5 heaping cups approx.
500g Sweet potato - 2 medium or 1 large Sweet potato - 4 heaping cups approx.
280g Onion (cut into 1/2 inch thick slices) - 1 medium onion - 2 cups (I have used red onion)
398ml can of cooked chickpeas (home cooked chickpeas will be 275g by weight water NOT included)
▶️ DRESSING:
1/4 cup of Extra Virgin Olive oil (55ml)
4 to 5 garlic cloves - 1 Tablespoon grated/minced
1 Teaspoon Paprika
1/2 Teaspoon Turmeric powder
1/2 Teaspoon Ground Cumin
1/4 Teaspoon Ground Cinnamon
1/4 Teaspoon Cayenne Pepper (OPTIONAL)
Salt to taste (I have added total 1+1/4 teaspoon of pink Himalayan salt)
▶️ GARNISH:
Lemon juice to taste (I have added 2 tablespoons)
1 Cup Green onion (85g) - chopped
1/2 Cup Cilantro (24g) - chopped
Drizzle of a good quality olive oil ( I have used organic cold pressed olive oil)
Black pepper to taste (I have added 1/4 teaspoon)
▶️ METHOD:
To a bowl add the olive oil, grated garlic, paprika, turmeric, ground cumin, cinnamon, cayenne, salt and mix it well. Set it aside.
Wash and chop the Cauliflower and sweet potato. Slice the onion in 1/2 inch thickness. Drain a can of chickpeas. Place the chopped vegetables and chickpea in a large bowl. Pour the dressing over it (every last bit of it :)). Mix it thoroughly so that the vegetables are nicely coated with the spices.
Line a baking tray with parchment paper and transfer the marinated vegetable to it. Spread the vegetables evenly. Preheat the oven to 400F and bake it for about 35 to 40 minutes. The baking time depends on the type of oven so keep an eye on it so that it does not burn. It took me 38 minutes to bake it in my oven.
Once baked remove the tray from the oven and let it slightly cool down. top it with lemon juice, green onion, cilantro, black pepper and a drizzle of olive oil. The garnish is a very important part of this recipe and adds a lot of flavor so please do not skip it.

????**Here’s what you’ll need:**????
Keto Green bean casserole Recipe:
2- 12 oz Bags Frozen Green Beans
1 1/2 Cups Condensed Cream of Mushroom Soup:
1/2 Cup Heavy Cream
4 oz Extra Sharp Cheddar
1 teaspoon Liquid Aminos (or Coconut Aminos)
1/2 teaspoon Black Pepper
1/4 teaspoon Seasoning Salt
Pork Rind Crispy Onions (Uncooked Version)
Preheat oven to 350°F.
Cook frozen green beans to 3/4 of the time on package. Should be crisp still. In a large mixing bowl, combine green beans with soup, cream, aminos, pepper, and salt, and mix well. Transfer to a casserole dish or 2 8x8 cake pans. Top with Cheese and bake uncovered for 25-35 minutes or until bubbly. During last 5 minutes of cooking, add pork rind onions and bake until just crispy. (don't burn em!)
Remove from oven and enjoy!

You will need a Cast Iron (for the best flavor) OR I’ve made this in my Dutch Oven - works just as good! ????
2 packages of Smoked Sausage Links (any favorite brand - I use, Kielbasas)
1 large yellow Onion or two medium (sliced thick)
About 6/7 large Rustic Potatoes (cleaned & diced) (you can peel the skin or use with skin - your preference)
2+ TBSP of Butter (I use salted)
Olive Oil
Salt & Pepper to taste (I use fresh ground black pepper and pink Himalayan salt, you can use Kosher)
1 TBSP Garlic Powder (or more per taste)
1 TBSP Oregano
1 TBSP Parsley
1/2 TSP Crushed Red Pepper Flakes (or more per taste)
2 TBSP Paprika (You can use smoked, I use regular)
