FOR THE FILLING: combine together all the ingredients for the filling and distribute evenly over the pastry surface. Roll up like a swiss roll starting from the long side. Grease a round cake tin 10 in. (26cm). Lay the roll in the cake tin in a spiral shape and brush with milk. OVEN: moderately hot BAKING TIME: about 50 minutes FOR THE ICING: sieve the icing sugar and blend with as much water as will give a good coating consistency. Make Spinach Hedgehog Buns: Fun!
We promise that no hedgehogs were harmed in the making of this video. Here is the recipe for our spinach hedgehog (and mouse) steam buns:
Ingredients:
3 c. fresh spinach leaves, stems removed
1/2 c. water
¼ t. baking soda
1 ½ c. all-purpose flour
1 t. yeast
¾ T. sugar
Instructions:
Cut parchment paper into squares large enough for each hedgehog bun.
Combine the spinach leaves and water in a blender and mix until completely smooth.
Strain the liquid into a cup using a fine mesh strainer, setting the puree aside.
Stir the baking soda into the spinach juice. This will help the dough retain its color after steaming.
Mix the flour, sugar, and yeast in a bowl. Add about ¾ c. of the juice and mix thoroughly.
Knead the dough for about five minutes, until it is no longer sticky. Cover the bowl with plastic wrap and let the dough rest for 10 to 15 minutes.
Roll the dough into a log long enough to cut into 10 to 12 rounds of about 1 inch thick.
Knead each dough round into a teardrop shape. Snip the surface of the dough with scissors to simulate a hedgehog’s spines.
Dip a toothpick into natural food coloring to make the eyes. (Alternatively, use tiny pieces of dried cranberries.)
Set each bun on a square of parchment and place in a steamer basket.
If desired, mix natural food coloring into the leftover dough, then use a fondant flower press to form it into flowers. Decorate the hedgehog buns with flowers.
Set the steamer basket in a warm oven with a pan of water. Mist the buns with water and let them rise for 1 to 2 hours.
The buns are ready to steam when they have nearly doubled in size and feel light in your hand.
Add water to the steamer pot, turn to high heat, set the basket on top, and cover. When you see steam coming out of the pot, turn the heat to medium and cook for 12 minutes. Do not lift the lid!
After 12 minutes, remove from heat (but do not lift the lid), and let the buns rest for three minutes.
Serve and enjoy!

Steamed Hedgehog Buns (刺猬黑豆沙包)
These steamed buns with sweet fillings are shaped like hedgehogs! They are filled with protein-rich black beans with hint of sweetness from natural date sugar and Crofter's fruit spread (which has no added sugars).
INGREDIENTS (12 buns):
- dough ( cut recipe in half: 3 cups all purpose flour, 1/2 packet yeast, 1.25 cups milk or water
- 1 can black beans (cooked, canned, drained)
- 1 tbsp. date sugar
- fruit spread/jam
- uncooked mung beans (opt. as 'eyes')
DIRECTIONS:
1. prepare your dough and let it rise for ~1 hour
2. meanwhile, mash together black beans and date sugar
3. divide your dough into 12 even sections
4. knead each individual section and roll into wrappers. make sure the wrapper is thicker in the middle so later you will be able to make cuts into the bun for the hedgehog 'quills'
5. add in a layer of black beans and a layer of fruit spread or vice versa
6. wrap as shown in the video
7. soak some uncooked mung beans in water and squish onto the bun as 'eyes'
8. cut the quills using scissors as shown. be careful!
9. put buns in a steamer and let them sit for 15 minutes before steaming
10. once water comes to a boil, steam for 10 minutes
11. serve and enjoy!

Ingredients
yield: 20 buns
240 ml yogurt, Greek
1 egg
1 egg white
100 ml oil, vegatable
300 gr all purpose flour
1/2 tsp salt
1 sachet baking powder (16 gr)
Topping:
1 egg yolk
sesame seeds
raisins or chocolate chips for the eyes
Instructions
Line a baking sheet with parchment paper and preheat oven to 200c/390f
1.Make the buns: In a large bowl stir together ingredients for the dough, knead until an elastic dough. Add more flour if the dough is sticky.
2.Make the hedgehogs: Roll the dough into balls about the size of a large lemon, Pinch and squeeze one end to form the face. Place raisins or hocolate chips for the eyes.
3.Brush back sides with egg yolk and sprinkle the brushed sides with sesame seeds.
4.Bake the bread rolls: Place in preheated oven and bake for about 25-30 minutes until golden brown.
