How To make Honey Twist Coffee Cake
Mrs. cecil lewis 2 pk Yeast
1/2 c Lukewarm water
1 c Butter or margarine
2 ts Salt
1 c Sugar
4 Eggs
2 tb Lemon juice <or>
Juice of 1 lemon 1/2 ts Ground nutmeg
2 c Milk
10 c Flour
honey topping:
1/4 c Butter or margarine; softene
2/3 c Powdered sugar
1 Egg white
2 tb Honey
icing:
2 c Powdered sugar
Boiling water 1 ts Vanilla
Soften yeast in water. cream butter, salt and sugar. Add slightly beaten eggs, lemon juice, spice, milk (half water and half canned milk) and soaked yeast. Stir in flour, keeping dough softer than for loaf bread. Knead on a lightly floured pastry cloth. Place in a greased bowl and brush top lightly with fat. Cover and let rise in a warm place until doubled in bulk. shape into a long roll about 1" in diameter. coil loosely into greased 9" layer pan or an 8x8x2" pan, beginning at the outer edge. Mix ingredients for Honey Topping and brush on dough. Let it rise until doubled in bulk. Bake at 350~F for 30 min. Cool slightly, dribble with icing made by adding boiling water 1 T at a time to powdered sugar. Add just enough water so that the icing flows freely from a spoon. Add vanilla. FOR THE CAKE
1/4 cup vegetable oil
3/4 cup granulated sugar
1 large egg
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 1/2 cups flour
1/2 cup milk
2 cups shredded carrots grate your own, not pre-shredded
FOR THE STREUSEL
1/2 cup brown sugar
2 tablespoons flour
2 teaspoons cinnamon
2 tablespoons butter melted
3/4 cup chopped nuts walnuts or pecans, if desired
FOR THE DRIZZLE
3/4 cup powdered sugar
1/2 teaspoon vanilla extract
1 tablespoon heavy whipping cream

SERVINGS: 12
DRY INGREDIENTS:
All purpose Flour – 2 ½ cups
Sugar – ½ cup
Baking powder - 2 tsp
Baking soda - 1 tsp
Salt – a pinch
WET INGREDIENTS:
Nestlé MILKMAID - ½ tin
Nestlé a+ Nourish Milk - 2 cups
Refined oil - ½ cup
Melted Butter - ¼ cup
Vanilla Essence - 1 tsp
Vinegar - 1 ½ tsp
HONEY SAUCE:
Honey - 3 tbsp
Water - ½ cup
Sugar - ¼ cup
JAM SAUCE:
Mixed fruit jam - 3 tbsp
Water - 2 tbsp
Desiccated coconut - for garnishing
METHOD:
Mix and whisk all wet ingredients together
Mix all the dry ingredients together
Combine the dry ingredients to the wet ingredients. Strain the mixture with help of a sieve in another bowl for a smooth batter
Put the mixture inside a cake tin and bake it for 15 minutes at 180 degree Celsius
Once it is baked, put it aside and let it cool down completely
For honey syrup, mix honey, sugar and water together and bring it to boil. Pour it in a bowl and let it cool down completely
For jam sauce, mix fruit jam to water, heat it up and bring to boil. Pour it in a bowl and let it cool down completely
Once the cake is completely cooled down, use a skewer to cut the top of the cake. Make small pores using a toothpick. Do not throw the top layer of the cake, it can be crushed and used for garnishing
Pour the honey sauce and spread using a brush. Now pour the jam sauce and spread on top of honey sauce. Keep the cake inside refrigerator for 10 minutes
Take the cake out and sprinkle desiccated coconut on top for garnishing. Put it back in the refrigerator for another 10-20 minutes
Take it out and serve it cold
