Hello friends, my name is Christine, and welcome to Frugal Fit Mom! Cook with me today as we bake homemade bread that is perfect for sandwiches! I have been baking this particular recipe for over 10 years for my large family and it's one of my favorites.

Mom's Best Moist and Chewy Oatmeal Cookies - Jill 4 Today
Who doesn't love a good oatmeal cookie, right!? These oatmeal cookies are so moist and chewy. I've added a good dose of chocolate chips to make them even more delicious. The recipe is easy and any novice cookie baker can do this! Here's the recipe:
Mom's Chewy Oatmeal Cookies
Ingredients
1 cup softened butter
1 cup granulated sugar
1 cup packed brown sugar
2 eggs
2 -1/8 teaspoons vanilla extract
2 cups unbleached all-purpose flour
2 cups old-fashioned oats
1-1/2 teaspoons baking soda
1 1/4 teaspoon ground cinnamon
1/2 teaspoon salt
Optional: 1 cup semi-sweet choco chips or raisins.
Pre-heat oven to 350 degrees.
In a large bowl, cream butter until creamy. Add the sugars and beat until well combined. Add eggs and vanilla, Beat until light and fluffy.
In a separate bowl combine the flour, oats, baking soda, cinnamon and salt. Add to creamed mixture and mix until just combined. Mix in the chocolate chips.
Drop by size if about a large tablespoon. 9 per cookie sheet is about right.
Bake at 350° for approximately 11 minutes or until lightly browned and just slightly soft in center. Cool on cookie sheet for 5 minutes. Transfer to cooling rack. ENJOY!
Makes 36 large cookies or approx. 60 smaller ones.

Oatmeal Bake! Baked Oatmeal Recipe! Healthy Breakfast Kids Love!
Oatmeal Bake recipe that can be made lots of different ways to make a delicious, thick, sliceable oatmeal that’s so easy for kids and toddlers to eat! Below I have the 2 versions I usually make, but you could try any fruit and just know that it works best with fruits that can stand up to a longer cooking time like pears, apples, plums, peaches, etc. delicate fruits like raspberries will turn a little mushy/jamy but should still taste good! I often make a pan of this oatmeal bake the evening before and we reheat servings it in the microwave for the next few days!
Pear & Lemon Oatmeal Bake
3 TBSP butter
1/2-2/3 cup sugar (brown sugar or sugar of choice) depending on ripeness of fruit
1 TBSP vanilla extract
5 cups oats
2 tsp baking powder
2 cups milk
1&1/4 cups water
3 eggs plus 1 yolk
Zest of 1 lemon plus juice
1 tsp diamond kosher salt or 1/2 tsp table salt
3 pears pealed and sliced (or halved and cored)
Directions
Place 9x13 dish in oven and preheat oven to 400 degrees F.
Mix sugar and vanilla in a small bowl.
Mix the oats, milk, eggs/yolk, zest and salt in a large bowl.
Once butter is melted, sprinkle/spread the sugar mixture around the dish (careful not to burn yourself) and place the sliced pears on top.
Squeeze the lemon juice over the pears.
**if you use halved pears instead of sliced pears, bake them in the pan at this point for 10 minutes before you put the oatmeal mixture on top. Otherwise skip this step.
Spread the oat mixture over the pears.
Bake for 5 minutes at 400 degrees F and then turn oven down to 350 degrees F and bake for 25-30 minutes more.
Serve warm with a drizzle of cream!
Apple Oatmeal Bake
Same ingredients as the pear version but omit the lemon and use 2-3 pealed apples depending on the size and slice them thin (think apple pie).
Same method except when you place the apple slices over the sugar and butter in the pan, bake them for ~10 minutes to give them a head start softening before you add the oatmeal mixture. If you use halved apples, then bake for 20 min before you add the oatmeal mixture.
Experiment and try other fruits once you get comfortable with these recipes!

Oatmeal Cake with Broiled Coconut Topping Recipe ~ Noreen's Kitchen
Greetings! I want to share with you my family's special recipe for oatmeal cake with a broiled coconut topping. I affectionately call it Funeral Cake because my mom only ever made it when she needed to take something to a funeral. I had to laugh because I took it to her house for Thanksgiving dinner and she said that she had just made one to send to a funeral! How funny!
This cake is super moist and delicious. It is made with simple ingredients that you will have on hand and even in your food storage. Oatmeal, eggs, butter, flour, sugar, brown sugar, nuts, coconut and evaporated milk. It is simply delicious.
I make mine with double the topping. Mom says it's too much. I disagree! This is wonderful the day you make it or the next, but in my house this disappears fast so you better get you some or it will be gone!
This cake would be great for any occasion. Potlucks, office parties, get together's and of course funerals! You could make this and cut it into bars and divide it up on pretty plates, wrapped with cellophane and have a couple really nice neighbor gifts for Christmas!
