1 c Butter
2 c Brown sugar
2 Eggs
1 ts Baking powder
1/2 ts Salt
3 c Flour
1/2 ts Soda
1 c Nuts; finely chopped
Mix well in order given one at a time. Press and shape dough into three loaves, about 2 inches square and 5 inches long on sheets of waxed paper. Wrap tightly in waxed paper and put in refrigerator. Chill at least 2 hours. To bake cut chilled loaf in thin slices. PLACE ONE INCH APART on ungreased baking sheet. Bake 375~ for 10-12 minutes. 1973 Indiana State Fair Winner.

DOODLE ICEBOX COOKIE

INGREDIENTS
Cookie Dough:
170 g Shortening
200 g Granulated Sugar
50 g Whole Eggs
2 tbs Milk
1/2 tsp Almond Extract
380 g All-Purpose Flour
2 tsp Double Acting Baking Powder
1/2 tsp Salt
Food Colouring
Royal Icing:
120 g Icing Sugar
3 tsp Milk
1 tsp Light Corn Syrup or Honey
1/4 tsp Almond Extract
Food Colouring
INSTRUCTIONS
Cookie Dough
1. Cream the shortening and sugar together until well combined for about 3 minutes (there are gonna be much fluffier when you're done).
2. Add in the eggs, along with milk and extract. Mix until all that liquid is well incorporated into the butter and sugar.
3. Add the sifted dry ingredients; the all-purpose flour, baking powder and salt. Mix well (the mixture will be a little bit crumbly at first, but keep mixing and it will come together just fine).
Note: To get a flakey and snappy cookies, don’t overwork this mixture; you’re kind of just incorporating the flour.
4. This cookie dough is ready to use (it doesn’t require any dough chilling), colour your cookie dough and to shape it ~ kindly follow instructions according to the video.
5. Store the completed cookies in the freezer for at least 30 minutes.
6. Cut the frozen cookies for about 5 mm thick (make sure that you use a very sharp knife), place it on a baking try and then store them in the fridge for 30 minutes before baking (to maintain the details).
7. Bake them in the preheated 160°C oven (baking time will vary depending on the size);
and don’t forget rotating your pans halfway through baking.
* Bake the cookies until the the bottom edges are just lightly browned (don't overcooked the cookies as the colour detail is really crucial).
8. When take out from the oven,cool them on the baking sheets for 5 to 10 minutes and then transfer to a wire rack to finish cooling.
Royal Icing
1. Simply combine all the ingredients together.
*Note: If it's too runny, add some icing sugar and if it's too thick, add the amount of milk 1/4 teaspoon at a time until you reach the desire consistency.
You do wanna work a little bit quickly with royal icing coz it will sets hard or else cover it with clingwrap.
2. Colour it, transfer to a piping bag and then draw the outline . Use a damp brush to correct the details.
NOTES
Baked cookies may be stored in an airtight container at room temperature for up to 1 week. Make sure to let the icing fully harden before stacking the cookies.
It also freeze well for up to 3 months, thaw to room temperature before serving.

How to Make Icebox Cookies
A simple recipe for old-fashioned Icebox Cookies (AKA Refrigerator Cookies). This recipe uses only a few basic ingredients but must be chilled for at least 4 hours before baking.

Roll sprinkles into some, mini chocolate chips into others, others plain. Nuts?
00:21 Cream together butter sugar egg and vanilla. Scrape down the sides and bottom of the bowl with a spatula to make sure all ingredients are well-combined.

Cookie Recipe ( Crispy melt away cookie BASE dough) :
- 750 gr soft room temp Butter ( 6 2/3 sticks )
- 300 gr Powdered Sugar ( 2 1/2 cups)
- 3 room temp X Large Egg Whites
- 900 gr All purpose Flour ( 6 cups + 1/2 cup)
- 3 tsp Vanilla
- 1/4 tsp Salt

Divide the dough into 5 equal portions and with each dough make 5 different cookies:
■ Vanilla Butter Cookies:
Leave the first dough as is.
You'll need a piping bag and a tip of your choice.
■ Linzer Cookies:
to the second cookie dough, add:
- 60 gr Almond Flour (1/2 cup)
- 40 gr All Purpose Flour ( 4 tbsp)
- 1/2 tsp Almond Extract
- Jam of your choice
■ Gingerbread *Style* Cookies:
to the third cookie dough, add:
- 2 3/4 tsp Ginger
- 3 tsp Cinnamon
- 2 or 3 tsp Cocoa Powder
- 40 gr Flour ( 4 tbsp)
For stronger gingerbread flavor add more ginger.
■ Sugar Cookies:
to the fourth cookie dough, add:
- 50 gr All Purpose Flour ( 5 tbsp)
- 1/2 tsp Vanilla
■ Chocolate Sugar Cookies:
to the fifth cookie dough, add:
- 60 gr Sweetened Cocoa Powder ( 7 1/2 tbsp) ( Bloom the cocoa with 5 tbsp hot Milk) If you're using UNsweetened cocoa powder you may have to add 1 tbsp more icing sugar.
- 20 gr All Purpose Flour ( 2 tbsp)
- Melted good quality chocolate to fill the cookies

sns에서 고양이 얼굴의 식빵 사진을 보게 되었는데 너무 귀여워 쿠키로 만들어 보면 좋을 것 같아 만들어 봤어요~
많이 복잡하지 않게 만들 수 있고 아이싱으로 여러가지 표정을 만드는 재미가 있더라구요~
쿠키가 구워지며 살짝 부풀기 때문에 너무 두껍지 않게 잘라 굽는게 좋은 것 같아요~
너무 단단하게 굳어도 잘 썰리지 않고 물렁하면 모양이 많이 망가질 수 있답니다~
보기만 해도 귀여워서 선물로도 좋은 쿠키인 것 같아요~^^

▶재료
무염버터 150g
슈가파우더 120g
소금 1g
달걀 1개 (약 50g)
바닐라익스트랙 3g
박력분 280g
아몬드가루 30g
베이킹파우더 1g
코코아파우더 3g
블랙 코코아파우더 3g
박력분 10g
슈가파우더 25g
달걀흰자 5g
레몬즙 3g
검정 식용색소
▶레시피
1. 무염버터를 부드럽게 풀고 슈가파우더, 소금을 넣고 섞은 뒤 달걀과 바닐라익스트랙을 넣고 섞는다.
2. 박력분을 체 쳐 넣고 아몬드가루, 베이킹파우더를 넣고 한덩이로 뭉치 도록 섞은 뒤 반죽의 1/5 정도를 2개의 볼에 나눠 담는다.
3. 나눠 담은 반죽에 1개는 코코아파우더를 다른 1개는 블랙 코코아파우더를 넣고 섞고 바닐라 반죽에 박력분(10g)을 넣고 섞는다.
4. 바닐라 반죽을 긴 원통 모양으로 만들고 윗부분을 삼각형으로 세운다.
5. 2가지 색의 반죽을 2/3씩 잘라 길게 만들어 바닐라 반죽 윗쪽에 붙이고 유산지를 이용해 원형으로 만들어 냉동실에서 30분 정도 굳힌다.
6. 남은 2가지 색의 반죽을 긴 삼각형으로 만들고 굳힌 반죽에 우유를 바르고 삼각형 모양의 반죽을 붙인 뒤 냉동실에서 30분 정도 굳힌다.
7. 칼로 얇게 자르고 오븐 팬에 올린 뒤 160도 예열된 오븐에서 15분 정도 굽고 식힌다.
8. 슈가파우더에 달걀흰자를 넣고 휘핑하고 레몬즙을 넣고 섞어 아이싱을 만든 뒤 1/3 정도를 짤주머니에 담는다.
9. 남은 아이싱에 검정 식용색소를 넣고 섞어 짤주머니에 담고 식은 쿠키에 얼굴을 그린다.

105g sugar powder [0.9 cup]
33g egg [6.2 tbsp]
White dough:
130g butter mix
110g cake flour [1 cup]
22g almond flour [3 ¾ tbsp]
Black dough:
130g butter mix
113g cake flour [1 cup]
16g almond flour [2 ¾ tbsp]
15g black cocoa powder [2 tbsp]
