How To make Iridofu
1 tb Oil
1 sm Onion, diced
1 sm Carrot, diced
24 oz Tofu, crumbled
2 tb Roasted sesame seeds
1/2 ts Salt
2 ts Shoyu
1 ds Pepper
Heat a wok & coat with oil. Add onion & carrot & saute for 3 minutes till onion is slightly browned. Add crumbled tofu & the remaining ingredients. Stirring constantly, saute over medium low heat for a bout 5 minutes, or until the tofu is light & dry. Variations: Add 1/4 c of any of the following: parboiled green peas; shiitake mushrooms; diced bamboo shoots. Also try adding 1 ts grated ginger. Shurtleff & Aoyagi, "The Book of Tofu"

Breakfast or brunch is debatably my favorite meal of the day. It just gets my day going into a positive direction. However, since I've went vegan, I've been relying on smoothies, granola, and cereal. As I was searching the internet, I found a Tofu Scrambled Eggs recipe and fell in love. This savory, easy, and healthy recipe is one of my go-to breakfast items. Japanese iri dofu (Scrambled tofu with five ingredients) - 15 min meal
An easy and nutritious under 15 minute recipe, easily customizable to suit your palate;)
Ingredients:
Slightly more than a handful of snow peas
2 small carrots
A packet of firm tofu
3 shittake mushrooms, soaked to rehydrate
1.5 tbsp soy sauce
1.5 tbsp sugar
1 tbsp mirin
3 eggs (extra protein)
Canola oil for frying

Yudofu is a traditional Japanese dish that's simple to make and is healthy and delicious in its simplicity. Subscribe HERE for weekly videos!
Ingredients: Serves 4
2 blocks firm tofu
1 stick konbu
1 tablespoon grated ginger
1/4 cup sliced green onions
1/4 cup bonito flakes
1 teaspoon fresh yuzu peel, sliced ( or lemon )
Instructions:
Cut tofu into 2-inch cubes. Put 3 cups water in a large pot. Add konbu and tofu and bring to simmer. Just before boiling, take out konbu. Discard konbu. Skim off foam on top of the water.
Serve with condiments and soy sauce. Yudofu is great with some white rice, vegetables pickled vegetables.

湯豆腐の作り方です。
材料はお好みの豆腐の他、
薬味として、ネギ、柚子、鰹節、生姜
ダシを取るための昆布を使います。
(薬味の準備)
ネギは小口切りなどにします。
・柚子は皮を剥いて千切りまたはみじん切りにします。
・生姜はすり下ろします。
(作り方)
鍋に水をカップ5杯入れます。
15cm程度の昆布を1本入れます
弱火でゆっくりと茹でます
アクが出たらすくい取り、豆腐に火が通ったらできあがり。
お薬味を載せて、好みの醤油でお召し上がりください。
