Most people LOVE Bailey’s Irish Cream.
What they don’t love is the price!
So I decided to do some research and experiment until I put together a recipe that tastes almost exactly like Bailey’s, but at a much more #affordable price!
After some clever number crunching and calculation, I figured you can make $90 worth of Bailey’s for around $40!
Now I’m no mathemequation expert, but that sounds a lot more affordable!
And it’s so easy, takes less than 10 minutes from start to finish, and almost zero skill!!
So give it a try! Feel free to increase or decrease the amounts of anything to your particular flavor preference! And try adding things to spice it up! Pumpkin spice for an autumn twist on Baileys. A little white chocolate syrup to give it a new flavor profile. A touch of almond extract to give it some nuttiness. The possibilities are pretty endless!
Drink it straight or on the rocks, mix it with your coffee, use it to make the Baileys Irish Cake, use it to make ICB shots (IYKYK)

One Bowl Coffee and Irish Cream (Baileys) Cake
If you love coffee or coffee cake, this One bowl Coffee and Irish Cream Cake is for you. This recipe is Inspired by an Irish cream and Coffee stacked birthday cake which I baked for a friend. It turned out to be the perfect pairing and I thought it will be a great idea to infuse both flavours into one cake.
Ingredient list:
2 cups flour
1½ cup brown sugar
3 tbsp instant coffee
2 tsp baking soda
1 tsp salt
3 large eggs
¾ cup milk
1 tsp vanilla
1 cup vegetable oil
½ cup baileys Irish cream
½ cup boiling water

If you like your booze then you will love this boozy adult desert. My baileys pound cake is super decadent and has the right amount of my favorite Adult beverage, Baileys. And yes I Personally prefer the original Baileys Irish Cream (the black bottle)! the chocolate ganache balances it out the sweetness and finishes off this desert nicely. The perfect Mother’s Day desert if you ask me!

Baileys pound cake
3 cups AP flour
1 1/2 cups light brown sugar
1 cup sugar
1 tsp baking powder
5 eggs
2 sticks butter
1/2 cup butter flavored shortening
2 tsp vanilla extract
1 cup baileys
Baileys chocolate ganache
1 bag milk chocolate chips (320g)
1 cup heavy cream
2 Tbsp Baileys
1/2 tsp vanilla extract
Preheat oven to 325F and Mix cake batter as directed in the video demonstration.
Bake for 70-80 minutes or until a toothpick inserted in the middle comes out clean. Allow the cake to cool on the pan for at least 20 minutes before inverting it on a cooking rack to cool down completely.
Prepare the chocolate ganache as instructed and refrigerate it for at least 1-2 hours. To make the process faster, pop it on your freezer for about 30 minutes or until it gets super thick! pour the ganache over cooled cake. Allow to set for about 5 minutes. Serve and enjoy!

Irish Cream Tres Leches Cake
Tres leches cake is traditionally a very moist cake with a filling that soaks into the cake as it chills. But this recipe adds a bit of extra flair with Irish cream to make a boozy sauce that’s even more delicious. Serve this up for St. Patrick’s Day or any holiday. Everyone will love it!

INGREDIENTS
For the cake:
- 12 tbsp unsalted butter, room temperature
- 1 3/4 cups white granulated sugar
- 4 large eggs
- 2 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 3 tsp baking powder
- 1/2 tsp kosher salt
- 1/2 tsp cinnamon
- 1 cup whole milk
For the milk mixture:
- 1 cup whole milk
- 1 14-oz can dulce de leche (can also use sweetened condensed milk)
- 3/4 cup Irish cream liqueur
For the frosting:
- 2 cups heavy whipping cream
- 2 tbsp Greek yogurt
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
INSTRUCTIONS
For the cake:
- Preheat oven to 350°F. Butter a 9×13 baking dish and set it aside.
- In the bowl of an electric mixer, cream the butter and sugar until light and fluffy, 5 minutes. Add the eggs one by one, letting them incorporate after each addition. Once the eggs are incorporated, mix in the vanilla extract.
- Separately, combine the flour, baking powder, cinnamon, and salt. Alternately add the dry ingredients with the milk, beginning with the dry and ending with the milk. Do not over-mix after the milk is added. A few lumps are ok. Finish mixing with a spatula to ensure the bottom of the bowl is evenly mixed.
- Pour the batter into the prepared pan and bake in the preheated 350°F oven until the cake is golden and a skewer inserted into the middle comes out clean, 25-35 minutes. Once baked, remove the cake from the oven and cool.
- While the cake is cooling, combine the whole milk, dulce de leche, and Irish cream. Whisk until smooth. The dulce de leche may be hard to mix in. If so, use a blender to make the milk mixture smooth. With the cake slightly warm, use a skewer or fork to poke holes all over the cake. Pour the milk mixture over the warm cake slowly, allowing the milk mixture to be absorbed. A small amount of milk may be visible on top of the cake. Cover the cake and chill for 4-6 hours or overnight.
- Once the cake has chilled, combine the heavy whipping cream, Greek yogurt, powdered sugar, and vanilla extract. Whip until the heavy cream is thick and holds stiff peaks, 2-3 minutes. Spread the whipped cream mixture over the cake and serve. The cake can be frosted and chilled overnight.
