1 pound hot Italian sausage
cut into 1 inch

pieces 1 pound sweet Italian sausage cut into 1 inch

pieces 1/4 cup water
1/4 cup olive oil
1/2 pound onions chopped
3 tablespoons minced garlic
2 pounds ground chuck
3/4 pound green peppers :
chopped coarse
3/4 pound red peppers chopped coarse
1/3 pound jalapeno chilis chopped :
(wear gl, up to 1/2
3 cans (36 oz.) Italian plum tomatoes -- drain
1 cup red wine
2 tablespoons tomato paste
1 cup minced fresh parsley
6 tablespoons chili powder
3 tablespoons cumin
2 tablespoons oregano
1 tablespoon basil
2 teaspoons pepper
1 tablespoon salt
1 1/2 teaspoons fennel seeds
2 pounds fresh Italian plum tomatoes quartered
***TO SERVE:*** Sour cream Chopped spring onions Monterey Jack cheese
Combine sausages and water in pan and brown - drain.
Saute onions and garlic in oil and chuck and cook until lightly brown.
Add sausages and peppers and chilis, cook until wilted.
Add canned tomatoes, wine and paste.
Add spices, cook 10 minutes.
You may want to degrease at some point either before or after addition of spic es.
Add fresh tomatoes and cook 10 minutes.

Stuffed Jalapeno Recipe | Hot Stuffed Peppers, Spicy And Tasty | Uma's Kitchen
Ingredients:
Jalapenos - 5-6
Gram flour (besan) - 1/2 cup
Coriander powder - 1 & 1/2 tsp
Cumin powder - 1 tsp
Dry Mango Powder (Amchur) - 1 & 1/4 tsp
Red chili powder - To taste
Salt - To taste
Oil - As needed
Coarsely ground roasted peanut powder* - 2 tbsp
Instructions:
Thoroughly wash 7-8 jalapenos and dry them with a paper towel. Slit all the jalapenos vertically to make space for the filling. Carefully carve out all the seeds inside and discard.
For the filling, mix besan (gram flour) with coriander powder, cumin powder, amchur (dry mango powder), red chili powder (remember that jalapenos are already spicy, so add accordingly) and salt to taste. Tightly stuff the jalapenos with this filling.
In a pan, heat 2 tbsp oil and add 3-4 jalapenos. Stir gently till the oil gets evenly coated on the surface of all the jalapenos. Fry for a minute and then reduce the flame from low.
Cover and let cook. Stir occasionally after every 2-3 minutes and let cook till all the jalapenos are soft.
Sprinkle 1 tbsp coarsely ground roasted peanut powder* and cook covered for 2 more minutes.
Now carefully remove in a plate leaving the extra oil in the pan. Add more oil (as needed) to the pan and repeat for the remaining jalapenos.
Serve hot with chapati/roti.
*Roast peanuts in a pan till some black spots start appearing on the outside. Crush a little with hands to separate peels. Blow away the peels and grind the peanuts coarsely.

Ingredients:-
100 gms processed cheese diced
200 gms mozzarella cheese diced
400 gms jalapeno peppers, slit and seeded
1 no red bell pepper chopped
1 tsp black pepper
A touch of salt
¾th cup milk
½ cup all-purpose flour
1 cup dry bread crumbs
oil for frying
Method:-
In a bowl mix, bell peppers, mozzarella cheese, processed cheese, salt and crushed black pepper properly.
Stuff the jalapeno chillies with this mix.
In another, mix refined flour and milk and form a thick slurry.
Dust the chillies with refined flour and coat them with the slurry and then the bread crumbs.
Keep the coated chillies in the freezer for 15 minutes.
Once cold, fry the stuffed chillies in oil on high flame turning every 30 seconds until crisp and golden brown.
Serve these Jalapeno Poppers hot with some ketchup!

Pickled Jalapeno - Chili Peppers
Ingredients:
10-12 whole jalapenos
1 tbsp salt
1 tbsp sugar
6 whole garlic (smashed)
1/2 onion (sliced)
1 cup water
1 cup white vinegar
Directions: (Checkout Ray Mack's Kitchen and Grill on YOUTUBE)
0:00 - ingredients
0:19 - Add all of your ingredients except for the jalapenos.
0:49 - Bring to a boil. Add jalapenos, Stir, and remove from heat.
1:27 - Let sit for at least 20 minutes then use tongs to remove the jalapenos from the pot to a jar; cover it with the liquid from the pot filling the jar.
2:06 - Store in the fridge for up to 6 months.
