How To make Jalapeno Squash Casserole
6 large yellow squash
sliced (6 to 7)
1/2 cup chopped onion
1 16 oz jar processed cheese spread
1 10 oz can cream of mushroom soup :
undiluted
3 jalapeno peppers (pickled) minced
Egg Replacer equivalent to 2 eggs 1 tsp. freshly ground pepper
3 cups fine dry breadcrumbs
1/4 cup margarine :
melted
Cover and cook squash and onions in a small amount of boiling water in a l arge saucepan, 5 minutes or until tender; drain well. Stir together squash and onion mixture, cheese spread and next 4 ingredients until blended; spoon into a lightly greased 13x9 inch-baking dish. Combine breadcrumbs and butter; sprin kle over squash. Bake at 300 degrees F For 55 min. or until golden brown.

INGREDIENTS
5-6 small /medium yellow squash (small/medium cubes)
4 thick cut bacon slices (chopped)
3/4 small onion (diced)
1 Tbsp bacon grease for roasting (as needed)
1/2 orange bell pepper (diced)
pepper (to your liking)
salt (to your liking)
Freshly grated Sharp cheddar cheese (2 & 1/2 C. (as needed)
1/2 C. Mayonnaise
1/2 C. Sour cream
non stick spray
TOPPING
1 Tbsp melted butter
1/3 C. Panko bread crumbs

Squash Casserole is a favorite at every family gathering. With cheddar cheese, crumbled Ritz crackers, and fresh yellow squash, this casserole is a great way to use those summer vegetables.
Squash Casserole
Ingredients
3 pounds of yellow squash
1/2 sweet onion, sliced
1 can cream of chicken soup
1 cup mayonnaise
1 cup shredded cheddar cheese
Salt and pepper to taste
2 full sleeves of Ritz crackers
1 stick of butter
Instructions
Slice squash thin and place in a bowl with sliced onion. In a separate bowl combine soup, mayonnaise, cheddar cheese, salt and pepper. Pour soup mixture over squash and onions. Mix until all squash is coated. Pour into a greased 9x13 baking dish. In another bowl add crushed crackers and melted butter, mixing to coat the crackers in the butter. Sprinkle crackers over the squash. Cover and bake in a 350 degree oven for 45 minutes. Uncover and bake for an additional 5 to 10 minutes or until crackers are golden brown.
