2 cups (205 g) oats gluten-free if needed
1 cup (120 g) almond flour
1 cup (90 g) oat flour (ground oats) gluten-free if needed
1 small (80 g) banana mashed
1/4 cup (80 g) maple syrup or agave syrup
1/4 cup (60 g) coconut milk canned
2 tsp baking powder
Strawberry Filling:
3 cups (450 g) diced strawberries
1/3 cup (105 g) maple syrup or agave syrup
2-3 tsp lime or lemon juice
5 tsp chia seeds
3 tsp potato starch or cornstarch

Date Oatmeal Squares Recipe | How to Make Date Squares
These date squares are crispy on the outside and soft on the inside; Two layers of oat crumble and one delicious-sweet date filling in the middle, this recipe is very easy to make with only few basic ingredients needed.

Ingredients:
For the oat crust:
2 cups (180g) Rolled oats
1 cup (125g) All-purpose flour
3/4 cup (150g) Light brown sugar
3/4 cup (170g) Softened Butter, cubed
1/2 teaspoon Ground cinnamon (optional)
1/4 teaspoon Salt
1/2 teaspoon Baking soda
For the date filling:
400g (14.1oz) Medjool dates, pitted
1 cup (240ml) Water
1 teaspoon Vanilla extract
1 tablespoon Lemon juice
Directions:
1. Place dates, water and lemon juice in a small saucepan. Bring to a boil, stirring occasionally. Reduce the heat and simmer for 5-8 minutes, stirring occasionally, until the dates are soft. Remove from heat and add vanilla extract. Let cool to room temperature.
2. Preheat oven to 350F (175C). Line a 9-inch (23cm) square baking pan with a strip of parchment paper. Set aside.
3. Make the crust: In a large bowl, combine oats, flour, salt, brown sugar and baking soda. Add the butter and mix until crumbly.
4. Press 2/3 of the mixture into the bottom of the baking pan. Spread the filling over the base, Sprinkle the remaining oat mixture.
5. Bake for 25-30 minutes, until golden brown. Let cool completely, then refrigerate for at least one hour before cutting into squares.

JAM BARS
SERVES: 8 to 10
1 stick unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed light-brown sugar
1 egg yolk
1 1/2 cups all-purpose flour
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup old-fashioned oatmeal
1/2 cup jam (your choice of flavor), stirred to loosen
1. Preheat the oven to 350˚F. Butter a 8- or 9-inch baking dish & set aside.
2. Beat the butter and both sugar in a bowl until light and fluffy. Beat in the egg yolk.
3. In another bowl, whisk the flour, cinnamon, salt and baking soda.
4. Add the flour mixture and oatmeal to the butter mixture and mix with your hands until combined and it forms crumbs when pinched between your fingers.
5. Press half of the mixture into the bottom of the prepared pan. Top with the jam, stopping about 1/2 tsp from the edges. Press the remaining dough into crumbs and scatter over top, covering all of the jam.
6. Bake 25-30 minutes until golden, let cool completely in the pan before cutting.

Shortbread Jam Squares
Makes: 9
INGREDIENTS
125 grams butter
50 grams caster sugar
1 egg
2 tablespoons oil
1 teaspoon vanilla extract
350 grams plain flour
2 teaspoons baking powder
400 grams blackcurrant jam
Icing sugar, for dusting
PREPARATION
1. Preheat the oven to 180˚C (350˚F).
2. In a bowl, whisk together the butter and sugar until combined.
3. Whisk in the egg, oil, and vanilla extract.
4. Mix in the baking powder and 250 grams of the flour with a spoon until combined.
5. Bring the mixture together using your hands to make a dough.
6. Spray a 9 inch/25 centimeter square baking tray with cooking oil.
7. Spread out half of the dough on the tray.
8. Spread the blackcurrant jam on top.
9. With the remaining dough, mix in the remaining 100 grams flour and rub with your fingers to make a crumb like texture.
10. Sprinkle the crumbs on top of the jam.
11. Bake for 20 minutes, until golden brown on top.
12. Leave to cool for around 20 minutes, the jam will be hot!
13. Sieve icing sugar on top.
14. Cut into squares.
15. Enjoy!

easy one-bowl baked oatmeal bars ????
Ingredients:
- 3 ripe bananas (mashed)
- 1/2 cup peanut butter or nut butter of choice
- 2 cups rolled oats
- 1/2 cup chocolate chips
- 1/2 cup chopped walnuts
Add all ingredients to baking dish (I used my @lecreuset baking dish) and mix. Bake at 350F for 18-28 minutes or until you start seeing the bars turn golden brown. Enjoy!!
