How To make Jim's Granola
1 c Unpopped AM Popcorn
4 c AM Oat Flakes
1 c AM Wheat Flakes
1 c AM Barley Flakes
2 c AM Cracked Wheat
-OR- 7 Grain Cereal 2 c Coconut (optional)
1 c AM Sunflower Seeds
1 c Peanuts
1 c AM Sesame Seeds
-- (Mechanically Hulled) 1 c -to...
2 c Honey or other sweetener
1/2 c AM Unrefined Vegetable Oil
1 tb Mapleine or vanilla
-OR- other flavor
OPTIONAL:
1 c Raisins
1 c Dates, chopped
1 c Dried apricots, chopped
1/2 c Dried pineapple, chopped
1/2 c Dried papaya, chopped
1 c Almonds, chopped
1 c Pecans, chopped
1 pk Banana chips
Pop popcorn. Combine all dry ingredients. Combine honey, oil, and flavoring in a separate bowl. Stir honey mixture into dry ingredients. Bake in non-preheated oven at 350 F. for 45 minutes, stirring every 15 minutes. Remove from oven; stir in fruit. Cool. Easy Granola Recipe | Not Too Sweet Granola
This is our house granola recipe. We love it so much, we sometimes make a double-batch just for us. I've combined two of my favorite granolas (Early Bird and Eleven Madison Park) to create an easy granola recipe that combines the best of both worlds, while lowering the sugar content to that perfect not-too-sweet level. Try it and let me know how you like it! Great over yogurt, with your milk of choice, or just on its own. Give some to your (deserving) family and friends and watch them go wild; it's simply the best granola! Don't be surprised if you never buy granola at the store again.

Easy (and Best!) Granola Recipe
4 cups rolled oats
1 cup sunflower seeds
1 cup pumpkin seeds
1 cup pecan pieces
(1/2 cup slivered almonds, included in this batch because I wanted to use them up!)
1 1/2 cups unsweetened coconut chips
1/2 cup extra-virgin olive oil
1/2 cup maple syrup
1 cup dried sour cherries
1 to 2 teaspoons kosher salt, divided and to taste
Preheat oven to 300F. Line a sheet pan with parchment paper.
In a large bowl, add the oats, sunflower seeds, pumpkin seeds, pecans, (almonds, if using), and coconut chips. Season with 1/2 teaspoon kosher salt. Toss to combine.
In a measuring cup, pour extra-virgin olive oil first and then maple syrup.
Pour the olive oil/syrup mixture over the oat mix and gently toss to combine.
Spread the mix in an even (not tightly packed) layer on the sheet pan. Bake for 45 to 60 minutes, removing sheet pan every 15 to 20 minutes to give everything a stir.
Remove sheet pan when granola is toasted to your liking. Add the dried sour cherries and season with another 1/2 to 1 1/2 teaspoons kosher salt, to your taste. Give it a stir. Let it cool before serving and storing.

Gingerbread Granola
Healthy and only lightly sweetened with natural foods and no sugar, this granola is grand for supporting a healthy lifestyle. It is fast and easy to make and wonderful to have on your pantry shelf vacuum sealed in jars.
Gingerbread Granola Recipe
4-5 cups rolled oats or other rolled cereal (I use 6-grain rolled cereal from honeyville.com)
2 cups chopped pecans
2 cups chopped walnuts
1 to 1.5 cups shredded coconut
1.5 cups dried cranberries or raisins
3 tsp cinnamon
1 tsp ginger
1/2 tsp allspice
1/4 tsp cloves
Mix together in a large bowl and set aside. In a small saucepan, heat the following ingredients together until melted:
2/3 cup coconut oil
1/2 cup molasses
1/4 cup real maple syrup
1 tsp. vanilla
Pour the melted ingredients (syrup) over the dry ingredients and stir until all ingredients are coated with the warm syrup. Pour onto a large baking sheet lined with parchment paper and bake for 40 minutes in a 325F oven, stirring once about half way through the baking time. When cool, place in airtight container or into jars and vacuum seal.
