Mocha Chocolate Icebox Cake

Ingredients
2 cups cold heavy cream
12 ounces Italian mascarpone cheese
1/2 cup sugar
1/4 cup coffee liqueur, such as Kahlua
2 tablespoons unsweetened cocoa powder, such as Pernigotti
1 teaspoon instant espresso powder
1 teaspoon pure vanilla extract
3 (8-ounce) packages chocolate chip cookies, such as Tate's Bake Shop
Shaved semisweet chocolate, for garnish
Directions
In the bowl of an electric mixer fitted with the whisk attachment, combine the heavy cream, mascarpone, sugar, coffee liqueur, cocoa powder, espresso powder, and vanilla. Mix on low speed to combine and then slowly raise the speed, until it forms firm peaks.
To assemble the cake, arrange chocolate chip cookies flat in an 8-inch springform pan, covering the bottom as much as possible. (I break some cookies to fill in the spaces.) Spread a fifth of the mocha whipped cream evenly over the cookies. Place another layer of cookies on top, lying flat and touching, followed by another fifth of the cream. Continue layering cookies and cream until there are 5 layers of each, ending with a layer of cream. Smooth the top, cover with plastic wrap, and refrigerate overnight.
Run a small sharp knife around the outside of the cake and remove the sides of the pan. Sprinkle the top with the chocolate, cut in wedges, and serve cold.

Kahlua Pumpkin Pie for the Holidays
Recipe for Pie:
Preheat Oven to 450 Degrees.
1 Graham Cracker Crust Pie Shell
1 Cup Evaporated Skim Milk
1/2 Cup Golden Monk Fruit or Light Brown Sugar
1/4 Cup Kahlua
1/4 Cup Applesauce
1 & 1/2 tsp Pumpkin Pie Spice
1/2 tsp Salt
2 Large Eggs, Beaten
1 Can Pumpkin (15 oz can)
Beat milk, sugar, Kahlua, apple sauce, spice, and salt together until blended.
Add eggs and pumpkin and mix again until smooth.
Pour into pie crust put in oven at 450 degrees and immediately turn it back to 325 degrees.
Bake for 40 to 50 minutes, until knife comes out clean.
*6 Points per slice on WW Blue with store brought graham cracker crust (can make lower point option with different crust)
HOMEMADE Graham Cracker Crust:
1 & 1/2 Cups Graham Cracker Crumbs
3 Tbsp Non fat plain yogurt or butter
2 Tbsp Golden Monk fruit
Preheat Oven to 350 degrees. Mix all together and press into 9 inch pie dish. Bake for 5 minutes then proceed with pie filling recipe. Makes 8 Servings

Dirty Girl Scout Cocktail Recipe:
1 Cup Milk (we used Unsweetened Vanilla Almond Milk)
1.5 Oz Kahlua
1.5 Oz Chocolate Vodka
.5 Oz Creme De Menthe
Shake well and pour over ice garnish with grated chocolate or mint leaves.
*1 drink 14 Points on WW blue plan (We shared the drink with mama B making it only 7 Points per drink)
