How To make Kitchenaid Pie Pastry
Servings: 2
2 1/4 c Flour, all-purpose
3/4 c Shortening, well chilled
2 T Butter or margarine, chilled
5 T Or 6 water, well chilled
Sift flour and salt into bowl. Cut shortening and butter into 4 to 5 pieces and drop into bowl. Attach bowl and flat beater. Turn to Stir Speed and cut shortening into flour until particles are size of small peas, about 30 seconds. Add water, a tablespoon at a time, until all particles are moistened. Use only enough water to make pastry form a ball. Watch dough closely as over mixing will result in a tough crust. Chill in refrigerator 15 minutes. Roll to 1/8-inch thickness between pieces of waxed paper. Fold pastry into quarters; ease into pie plate and unfold, pressing firmly against bottom and side. Trim and crimp edges. Fill and bake as desired. For Baked Pastry Shell: Prick sides and bottom with fork. Bake at 450F for 8 to 10 minutes until light brown. Cool completely before filling. HINT: I also chill the wax paper and rolling pin. KITCHENAID COOK BOOK - jean hores

KitchenAid® Attachment Demo Series: Pastry Beater
The right stand mixer attachment can make your pies and other bakery fluffier and tastier. Discover what the KitchenAid® Pastry Beater, a specialized beater that tackles the challenging task of cutting cold butter into flour for light and flaky pastries, can do as you bake.
Create Handmade Quality Pastry Dough with Less Effort
One of the greatest benefits of the pastry beater is its ability to save you time and energy on making pastry dough from scratch. This attachment can substitute for a handheld pastry cutter, using the power of your stand mixer. Crust made with the pastry beater has fluffy air pockets distributed throughout the layers, ideal for flaky pie.
Cut, Mash, Shred and More!
The versatile pastry beater can be used for a variety of dishes, from savory pastry recipes like biscuits and empanadas to sweeter recipes that call for a flaky crust like pies and scones.
It’s excellent for mashing fruits and veggies, making guacamole and egg salad, and even shredding chicken. If that isn’t enough, this stand mixer attachment can even be used to batch muddle cocktails!
Evenly Distribute Butter Without Melting
A tender, flaky pastry is best achieved when butter or fats are distributed into the dough. The pastry beater's design combined with the planetary mixing action of your stand mixer even distributes cold butter without melting it.
Easily Clean and Store for Continued Use
The pastry beater is top-rack dishwasher safe, which means you can quickly and easily clean your stand mixer attachment after every use. Cleaning your pastry beater regularly will help keep it in great condition!
