0:47 potato selection for chips.
0:53 Peel the skin on the potato.
1:06 slice the potatoes.
1:58 Wash sliced potatoes 2 to 3 times.
2:24 Soak the sliced potatoes for 5 mins in chilled water.
2:33 Place paper napkins.
2:40 Drain potatoes.
2:46 Dry them completely.
3:41 Heat oil in a pan.
3:44 Fry until they turns crispy.

Parmesan Crisps | Easy Cheese Tuiles | Chef Studio Modernist
Here's a quick tutorial on how to make these super easy parmesan cheese crisps. They look fancy but they're only one ingredient. All you need is grated parmesan. Support the channel and get a Lemon Membership here:
I've found that if you use the inner part of the parmesan as opposed to the harder stuff near the rind you get much better results. I think it has something to do with the moisture in the cheese separating from the fat.
Grate your parm, place in on a silpat lined baking sheet, bake at 400 F (200 C) for 5 minutes. Be careful because these burn easily. You can shape them right out of the oven when they are still pliable or use a cutter to get a super clean shape.

Crispy Fried Chili Chips, Guizhou-style (香辣脆)
Chili chips! Kind of my own translation there, but I think the shoe fits. Logic's the same: it's a crispy, salty, incredibly addictive snack. But getting there with hot chilis instead of something starchy like potato? Takes a bit of technique to get there.
We're doing the Guizhou variety here, but this's also a classic in Hunan. And really, it's a snack you can find in convenience stores throughout the country - especially in bagged form, they'll often contain fried peanuts too.
