How To make Licorice Liqueur
2 1/2 tb Licorice root, chopped
1 1/2 c Vodka
1/2 c Sugar syrup (see recipe)
-to taste Wash the licorice root and chop into small pieces. Add to vodka and steep for 1 week. Strain and filter. Add sugar syrup and steep for 1 week. Ready to serve. Adjust taste with extract if necessary. Yield: 1 pint plus Container: Quart jar

Liquorice And Mixed Spice Infusion : Making And Tasting
Today I am going to share my mixed herd infusion attempt with you. I just wanted to get something done so Im shooting from the hip a little on this one team!
The recipe I made:
10g licorice
5g cinnamon bark
1/4 vanilla bean
1 peppercorn
1g fennel seeds
1g star anise (I changed my mind half way through on this)
500ml of vodka
Infused for 3-4 weeks.
Pocket scales 100g in 0.1g increments

Ricetta e procedimento del Liquore alla Liquirizia fatto in casa
con pochi semplici ingredienti e un metodo facile e veloce.
Confezionato diventa anche una bella e originale idea regalo.
Per gli amanti della liquirizia ecco come fare un digestivo dal sapore fresco e intenso.
Occorrono pochissimi ingredienti ed il risultato è un liquore piacevole e dalla consistenza cremosa. E' pronto dopo un paio di giorni dalla preparazione, si può servire a temperatura ambiente, ma è preferibile tenerlo in congelatore e servirlo ghiacciato.

Anise Liqueur
5 cups sugar
2 ½ cups water
5 cups alcohol (99% for consumption) or aguardente
2 tbsp anise extract
In a pot, add sugar and water. Bring to a boil until the sugar is syrup. With a spoon, lift up the syrup, if it forms a constant flow, it is ready. Let the syrup cool, once it is cool, add aguardente and anise extract. Pour into bottles and let sit in a cool place for a couple days. The syrup should begin to crystallize around the bottle.

5 xícaras de açúcar
2 ½ xícaras de água
5 copos de álcool (99% para consumo) ou aguardente
2 colheres de sopa de extrato de anis
Em uma panela, adicione o açúcar e a água. Leve ao fogo até o açúcar virar uma calda. Com uma colher, levante a calda, se formar um fluxo constante, está pronto. Deixe a calda esfriar, quando esfriar, adicione a aguardente e o extrato de anis. Despeje em garrafas e deixe descansar em um local fresco por alguns dias. A calda deve começar a cristalizar ao redor da garrafa.

Fogcrawler’s Old Fashioned Soft Black Licorice
(For an 8” or 10” Camp Oven)
Ingredients:
Reduction Mixture
1 ½ cups water
2 tbs. licorice root, crushed
4 star anise, crushed
1 tbs. anise seeds, crushed
1 tbs. fennel seeds, crushed
Remaining Ingredients
½ cup concentrated liquid (from reduction mixture)
2 tbs. gelatin
1 ½ cup unsulphured blackstrap molasses
½ cups sweetened condensed milk
1 tbs. licorice root powder
1 tbs. licorice root extract
1 tbs. anise extract
1 tbs. olive oil
¼ tsp. kosher salt (optional)
black food coloring (5-7 drops)
¾ cup soft wheat flour
¼ cup soft wheat flour (for dusting)
Directions:
1. Add ingredients for the reduction mixture into the oven and simmer until liquid is reduced down to ½ cup. (About 20-30 minutes)
2. Remove mixture from oven and strain to remove particulate matter. Add the cooled concentrated liquid back into the oven. Sprinkle and stir the gelatin into the concentrated liquid and allow gelatin to soften.
3. Add remaining ingredients into the oven, except the flour and heat to 240° F, using a candy thermometer, stirring the boiling mixture constantly.
4. Remove oven from the heat and stir in the flour, using a small sifter.
5. Transfer the hot licorice into a parchment paper lined small baking dish, allow it to cool.
(Place into an ice chest to speed up the cooling time)
6. Transfer cooled licorice to wax paper and dust with additional flour. Slice licorice into strips and then cut into bite sized pieces.
