Grown Up Mac & Cheese | 5 Second Rule with Julie
Pop the champagne and put on the pearls because this cheesy classic is fancy AF.
INGREDIENTS:
1/3 cup Pine nuts
100g Prosciutto, thinly sliced
1 bunch Sage Leaves
2 cups Macaroni
2 tbsp butter
2 tbsp flour
2/3 cup milk
¼ cup champagne
1 cup White Cheddar
½ cup greyer
½ cup parmesan
STEPS:
1.) Begin by toasting the pine nuts in a dry pan over medium heat. 2.)Once fragrant and slightly golden remove form heat and place in a small bowl. Set aside.
3.) Add a drizzle of oil to the pan and bring over medium heat. Fry the prosciutto and sage just until crispy, 1-3 minutes. Remove from pan and let drain on a paper towel.
4.) In a large pot of boiling salted water, cook pasta following directions on package.
5.) For the cheese sauce, melt the butter in a sauce pan and sprinkle over the flour. Stir together until a paste has formed. Pour in milk and champagne and stir until the mixture has thickened and there are no lumps.
6.) Remove from heat and add in all three cheeses stirring to melt until the sauce is smooth. Pour over drained pasta and add in half the prosciutto, pine nuts and sage. Mix to combine and then once plated add a bit more prosciutto, pine nuts, sage and parmesan.

Grown Up Mac and Cheese

Ingredients
4 ounces thick-sliced bacon
Vegetable oil
Kosher salt
2 cups elbow macaroni or cavatappi
1 1/2 cups milk
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
4 ounces Gruyere cheese, grated
3 ounces extra-sharp Cheddar, grated
2 ounces blue cheese, such as Roquefort, crumbled
1/4 teaspoon freshly ground black pepper
Pinch nutmeg
2 slices white sandwich bread, crusts removed
2 tablespoons freshly chopped basil leaves
Directions
Preheat the oven to 400 degrees F.
Place a baking rack on a sheet pan and arrange the bacon in 1 layer on the baking rack. Bake for 15 to 20 minutes, until the bacon is crisp. Remove the pan carefully from the oven - there will be hot grease in the pan! Transfer the bacon to a plate lined with paper towels and crumble when it is cool enough to handle.
Drizzle oil into a large pot of boiling salted water. Add the macaroni and cook according to the directions on the package, 6 to 8 minutes. Drain well.
Meanwhile, heat the milk in a small saucepan, but don't boil it. Melt the butter in a medium pot and add the flour. Cook over low heat for 2 minutes, stirring with a whisk. While whisking, add the hot milk and cook for a minute or 2 more, until thickened and smooth. Off the heat, add the Gruyere, Cheddar, blue cheese, 1 teaspoon salt, pepper, and nutmeg. Add the cooked macaroni and crumbled bacon and stir well. Pour into 2 individual size gratin dishes.
Place the bread slices in a food processor fitted with a steel blade and pulse until you have coarse crumbs. Add the basil and pulse to combine. Sprinkle the bread crumb mixture over the top of the pasta. Bake for 35 to 40 minutes, or until the sauce is bubbly and the macaroni is browned on the top.

Jalapeño Popper Mac & Cheese
// INGREDIENTS //
- 1/2 lb elbow pasta
- 2 tsp 'better than bouillon' paste or stock
- 3 tbsp butter
- 4 cloves garlic, minced
- 5 jalapeños, finely chopped (+/- really depends how spicy the jalapeńos you got are, can also remove the seeds if you want less heat)
- 2 tbsp AP flour
- 2 cups heavy cream, room temp
- 3oz cream cheese, room temp (about a third of a regular 8oz box)
- 1 tbsp cajun seasoning (I used the slap ya mama hot blend)
- 1 tsp kashmiri red chili powder or paprika (both are mild this is mainly for color)
- 1 tsp freshly cracked black pepper
- 8 oz freshly grated sharp cheddar cheese (please do not get pre-shredded!!)
- 6 oz freshly grated pepper jack cheese
- Mugful of pasta water
// RECIPE //
1️⃣ Start boiling water in a large pot. In the meantime, in a large pan, heat up 2 tbsp of your butter and then sauté your jalapeños and garlic for 2 min.
2️⃣ Melt the remaining tbsp of butter and add in flour. Mix until a roux forms (a thickish paste starts forming and the raw flour smell goes away).
3️⃣ Your water should be boiling by now and you can mix in the bouillon paste and add pasta. Set a timer to cook just until al dente.
4️⃣ Whisk in heavy cream on low-med heat, whisk in cream cheese, seasonings, and then cheeses. Once everything is combined, taste and adjust as needed, turn the heat off.
5️⃣ Drain your pasta (make sure to reserve pasta water!) and add the al dente pasta in the cheese sauce with as much pasta water as needed to get your desired consistency.
6️⃣ Once everything is well combined, you can enjoy as is or you can transfer to an oven-safe dish to bake!
7️⃣ To bake - top with more shredded cheese on top and bake at 375F just until the cheese is melted and then nestle in some sliced jalapeños, pushing them slightly with the back of your spoon. Then put back into the oven with the broiler on until you get a nice golden crispy top - mine took about 4 min but make sure you keep an eye on it.
