How To make Make Ahead Cheese and Chile Souffle
1/4 cup butter or margarine
1/4 cup flour
1 cup milk
6 ounces cheddar cheese
shredded
4 tablespoons bottled hot chile salsa :
or to taste
1/2 teaspoon salt
6 eggs -- separated
1. Preheat oven to 375 degrees F. Lightly butter an 8-cup souffle dish; set aside.
2. In a medium saucepan over medium heat, melt butter. Whisk in flour until mixture is smooth. Whisk in milk.
3. Whisk sauce over medium-high heat until it boils and thickens. Remove pan from heat.
4. Add cheese, salsa, and salt; stir until cheese melts. Beat in egg yolks.
5. In large bowl of electric mixer, beat egg whites until they hold soft, moist peaks. Stir one fourth of whites into cheese mixture to lighten it; fold in remaining whites.
6. Pour mixture into prepared souffle dish and bake in preheated oven 30 to 40 minutes.
* Timesaver Tip: To make ahead: Prepare recipe through step 4. Cover surface of mixture with wax paper and refrigerate up to 24 hours. Put egg whites in a bowl, cover, and refrigerate. To complete dish, bring cheese mixture and egg whites to room temperature (this can be done quickly in a microwave oven at a low setting) and continue with steps 5 and 6. (Refrigeration is not necessary if recipe is prepared only a few hours in advance.)
To make ahead and freeze: Prepare recipe through step 5. Wrap freezer-to-oven souffle dish in aluminum foil. Label, date, and freeze up to 2 months. To serve, preheat oven to 375 degrees F. Remove foil and put souffle dish directly into oven from freezer; do not thaw. Bake 50 to 55 minutes. Souffle will be puffy and the top well browned. Serve immediately.

CHILI EGG PUFF RECIPE
1 tsp. baking powder
1⁄2 tsp. salt
2 cups small curd cottage cheese
4 cups shredded jack cheese
1⁄2 cup butter, melted and cooled
1 (4 oz.) can diced/chopped green chilies (I use mild Old El Paso brand)
Preheat oven to 350 degrees. In a large blender, beat eggs until light and lemon colored. Add flour, baking powder, salt, cottage cheese. Blend well.
Add Jack Cheese and green chilies and stir together (do not use blender for this). Pour mixture in a well buttered 7 x 12 inch baking pan or casserole dish.
Bake in a preheated 350 degree oven about 45 minutes, or until top is browned and center appears firm. Let stand 10 minutes before cutting and serving. Serves 8.
Note: The size of the casserole dish (depth, etc.) will determine the baking time. I’ve found with a flatter dish, it will bake faster.

This side dish goes beautifully with just about anything, I love it so much that I can eat it all alone, hot, warm or cold. My whole family loves it and it’s one of the first dishes everyone goes to on the buffet table. I always prepare a double batch for thanksgiving and Christmas a d when I need a dish for a potluck, this is one of my favorites to take, and I always give out the recipe a few times, I know it by heart. 1 14.5 oz. Can Creamed Corn
1 15.25 oz. Can whole kernel sweet corn (drained)
1 large egg
1 C. Sour cream
1/4 C. Chopped green onions (white n green parts)
1/2 tsp. Sugar
Pepper as needed (optional)
1 8.5 oz. Box Jiffy corn muffin mix
Non stick spray
TOPPER_________________________
Chopped green onions (as needed)
Freshly grated cheese of your choice as needed (i used mixed Sharp cheddar and Monterrey jack)
TIPS__________________________
1. You can double this recipe, if you do, add 2-4 eggs (I use 3)
2. You can replace Sour cream with Greek yogurt or Mayonnaise (you decide)
3. You can use fresh, frozen (thawed) or canned corn
4. Use an 8x8 dish or 9x13 if doubling the recipe)
5. For heat you can use finely chopped seedless jalapeño or can pickled jalapeño (drained)
6. You can add finely chopped bell pepper (green, red,orange or yellow)
7. Bake till no longer jiggly In the center
8. Bake single recipe for approximately 45 minutes
Double recipe needs to be checked at 45 minutes and baked Longer if necessary til no longer jiggly in the center
9. Using a metal pan make take less Time than glass
10. ALL THESE TIPS ARE SUGGESTED, but you decide if you want to follow these tips or not, the decision is yours.
