How To make Make Ahead Gazpacho
2 c Vegetable Stock
2 c Tomato juice
2 T Lemon juice
2 T Green taco sauce
1 t Sugar
1/2 t Garlic salt
1/8 t Pepper
1 x Cucumber *
1 x Green pepper **
4 x Large tomatoes ***
3 x Green onions ****
* Cucumber, peeled, seeded, and coarsley chopped ** Green pepper, seeded and diced *** Tomatoes, peeled and coarsely chopped **** Green onions (including tops) thinly sliced In a 3-quart pan over medium heat, combine stock, tomato juice, lemon juice, taco sauce, sugar, garlic salt, and pepper. Leave uncovered and bring to a boil. Stir in cucumber, green pepper, tomatoes, and onion; bring mixture, uncovered to a boil again. Remove from heat and cool. Cover and refrigerate until well chilled. Serving size: 1 cup Per serving: 3 grams protein, 14 grams carbohydrates, no cholesterol, 64 calories. An easy make-ahead soup to begin a meal with.

Watermelon Gazpacho
When it's too hot to turn on the oven, gazpacho to the rescue! This is an old favorite, one I love this time of year in particular — it's so refreshing. It does require a fair amount of chopping but it yields a ton, and because there's no cooking, it's essentially done when the chopping is done. Do plan ahead, however: it requires a minimum of one hour of chilling before serving.

When I visited Seville, Spain, I was OBSESSED with the gazpacho I had there. An authentic gazpacho recipe is one of the simplest, most perfect dishes – capitalizing on the ripest, freshest tomatoes, a little zing from Sherry wine vinegar, and the best quality extra virgin olive oil which creates a velvety texture.
Although adding bread to thicken the soup is something I thought was mandatory, my favorite gazpacho in Spain did not include bread, and instead, focused on the intensity of the tomato, thickened by olive oil alone.

Ripe plum tomatoes 2 pounds diced
Cucumber 1 peeled and diced
Green bell pepper 1/8 cup diced
Garlic 1 clove minced
Spring onions 2 chopped
Day old bread 2 cups diced (divided in half)
Sherry vinegar 2-3 tablespoons
Extra virgin olive oil 1/4 cup
pinch of salt

note:
Reserve a little cucumber, tomato and spring onions as garnish. Use half of the bread in the gazpacho and the other half for croutons.
