Living in NYC for the last 8 years, I've seen my fair share of Tortas being served out of Mexican food trucks, but why no love for the Cemita? In episode 5 of the Sandwich Series, I set out a journey to re-create this Mexican street sandwich from scratch in order to answer that question myself. #sandwichseries #brothersgreeneats

Cemitas El Tigre -
0:33- Intro
5:03- Salsa Roja
Ingredients:
- Tomato (6-8, medium size)
- Red Onion (1, medium size)
- Dried Chilies (6-10 or more, your preference of chilies)
- Olive Oil
- Cilantro (handful)
- Garlic (2 cloves)
- White Wine Vinegar (2 tablespoons)
- Salt (to taste)
Steps:
1. Grab a baking sheet with parchment paper, drizzle some olive oil and put your tomatoes and red onion on it. Roast them at 450°F for 5-10 mins, until they are nice and soft.
2. Roast the dried chilies (cayenne, chipotle, ...etc) in a cast iron pan on the stovetop to get a little char. Keep your eye on these chilies so you don’t burn them, they burn fairly quickly.
3. Add roasted tomatoes, roasted onion, cilantro, garlic, salt, and roasted chilies (deseeded them if you don’t want the salsa to be too spicy) into the food processor. Blend them all together.
4. And here is your salsa. Smokey and spicy! Enjoy!
10:22- Bistec Milanesa (Fried Breaded Beef Cutlet)
Ingredients:
- Bottom Round Beef
- Red Onion (½ of medium size of onion)
- Garlic (2-3 cloves)
- Black Pepper (to taste)
- Milk (1 cup)
- Flour
- Breadcrumbs
Steps:
1. Marinade -- add the red onion, garlic, and black pepper into food processor. Blend them together, and add in some milk. And blend them together again to a nice mixture.
2. Pour the marinade mixture into a mixing bowl, and add in your steak. Marinate the meat for at least an hour or overnight.
3. Grab a plate or a container, add in flour and breadcrumbs there. Mix it nicely.
4. Coat the marinated meat with flour and breadcrumb mixture, nice and even.
5. Heat up a pan at medium-low heat, fry the coated beef cutlets until they are nice and crispy.
6. Season it with salt.

TORTAS DE CARNE GUISADA: Mexican Sandwiches with Marinated Chuck Steak, Chile, Cheese & Avocado
If you're not familiar with tortas, they're Mexican sandwiches made with bolillo or telera rolls, that can be filled with all kinds of wonderful ingredients. In this video, I make Tortas de Carne Guisada, which are sandwiches of fried meat. But not just any fried meat. This is chuck steak that was cut into strips and then marinated overnight in all kinds of wonderful seasonings. Then, when it came time to fry it, I did so with Hatch green chile and onion for maximum flavor. Add to that some melted cheese, lettuce, tomato, avocado, and a chili-lime dressing on a toasted roll, and you're looking at one mouth-watering sandwich. Read on for the recipe:
For Marinade:
1 lb. boneless chuck steak, cut into strips
season with salt, pepper, 2 minced garlic cloves, juice of 2 small limes, and 1/2 cup of orange juice. Place in sealed ziplock bag or container with lid and let marinate overnight.
For Chile-Lime Dressing/Sauce:
2 Tbsp. mayonaise
2 Tbsp. sour cream
1/2 tsp. red chile powder
juice of 1 small lime
salt to taste
*Amounts are not exact. You can use more or less of any of the ingredients, according to your own taste. Whisk together all the ingredients until you have a smooth, spreadable sauce. Refrigerate until ready to use.
For Tortas de Carne Guisada:
1 lbs. marinated steak strips
1/4 cup onion, chopped
2 Tbsp. chopped Hatch green chile
cheese of your choice (I used sliced muenster cheese)
bolillo or telera rolls, sliced down the middle
butter, at room temperature
lettuce, shredded
tomato, sliced
avocado, sliced
Heat skillet with enough oil to lightly coat the bottom. Fry marinated strips of meat in it. Add in onion and green chile and combine well. When meat is fully cooked and liquid has cooked out, place cheese slices on top, cover, and remove from burner.
Heat griddle. Slice bolillo or telera rolls down the middle, and spread butter on the inside of the rolls. Place butter side down on griddle and let toast until golden brown.
Spread chile-lime dressing on toasted side of rolls. Add carne guisada with melted cheese on bottom roll. Top with desired amount of lettuce and tomato. Place a generous helping of avocado on to bun. Season with a little salt. Close sandwich and enjoy!

Toasted Mexican Sandwich (1952) on Sandwiches of History
A lot of times, cookbook authors of the past would slap names of “exotic” place on sandwiches that had nothing to do with the place as a way to gin up interest in the sandwich. Well, I have to say at least the Toasted Mexican Sandwich from 1952’s “West Coast Cook Book” uses ingredients that try to emulate actual Mexican flavors. Now, the recipe only said “canned green chilis” and given that it’s “Mexican” you might be tempted to think they meant canned jalapeños. But the recipe specifically calls out that the sandwich resembles chili relleno. So, I went with canned hatch chilis. They have a slight heat and great flavor. And they go really well with the jack cheese.
