Hi, welcome to Elise's Eats!
This microwave meatloaf is incredible and is really simple and quick! A perfect snack for any time.
I use quick cooking oats in this recipe (so it can be gluten free!) and I found that by using oats and milk over breadcrumbs and egg, it keeps the meatloaf from drying out despite being cooked in the microwave. Enjoy! :D

How to Make Momma's Meatloaf
Momma's Meatloaf is a classic meatloaf that has the best flavor ever! This meatloaf recipe is easy to make, holds together, and has the best glaze on top!

✅Ingredients
• 2 pounds lean ground beef
• 1/2 white onion diced
• 1 cup dried bread crumbs
• 1/2 cup milk
• 1 large egg
• 2 tablespoons Worcestershire sauce
• 1 teaspoon salt
• 1 teaspoon basil
• 1 teaspoon oregano
• 1/2 teaspoon pepper
• 1/2 teaspoon crushed red pepper flakes
FOR THE GLAZE:
• 1/2 cup ketchup
• 2 tablespoons brown sugar
• 1 tablespoon Worcestershire sauce

1️⃣ Preheat the oven to 350 degrees. Lightly grease a 9x13 pan.
2️⃣ 00:00:11 - In a large mixing bowl, knead together the ground beef, onion, bread crumbs, milk, egg, Worcestershire sauce, salt, basil, oregano, pepper, and red pepper flakes.
3️⃣ 00:01:12 - Shape the meat into a loaf and put it into the prepared pan. Bake in the 350 degree oven for 45 minutes.
4️⃣ 00:01:43 - Mix up the glaze in a small bowl by whisking together the ketchup, brown sugar, Worcestershire sauce. Brush it over the hot meatloaf.
5️⃣ 00:02:15 - Increase the oven temperature to 400 degrees and bake an additional 15 minutes, or until the meatloaf reaches an internal temperature of 160 degrees F.

Corning Ware Microwave Meat Loaf Recipe from 1984 | 7 minute meat loaf for two
Today we're making a Corning Ware Microwave Plus meat loaf recipe from 1984! Sharing :)
Meat Loaf Solitaire
1 egg beaten
1/2 lb. ground beef
1 cup bread crumbs
2 tablespoons minced onion
1 tablespoon minced green pepper
1 tablespoon prepared horseradish
1/2 teasppon salt
1 tablespoon catsup
1/2 teaspoon dry mustatd
2 tablespoons catsup (for topping)
In a PYREX mixing bowl, toss egg and
ground beef until blended. Add remaining
ingredients (except catsup for topping).
Shape into loaf and place in CORNING
Microwave Plus 24-oz. Oval Casserole.Top
with catsup. Cook on high for 6 to 8 minutes.
Cover and let stand for 5 minutes. Serves 1-2.

Now I always tend to take a recipe and make it my own. I do that with cheese sauce for mac and cheese, you name it. If I've made it, I've altered it.
Quarantine Cooking with Carolyn Easy Microwave Meatloaf
Easy Microwave Meatloaf
1/3 cup marinara or tomato sauce
1/3 cup panko breadcrumbs
2 Tablespoons grated onions
½ teaspoon kosher salt
½ teaspoon black pepper
1 lb. ground sirloin
1 egg
2 oz. part skim mozzarella
Combine the first 8 ingredients (marinara through the egg). Spread mixture evenly in a microwave safe loaf dish sprayed with cooking spray; do not pack mixture into dish. Loosely cover with a paper towel, microwave at high 8 minutes. Preheat the broiler.
Sprinkle meatloaf with cheese, broil 3 minutes or until browned.
