1/4 c Dried Chopped Onion 1 1/2 lb Ground beef 3/4 c Bread crumbs 1/4 c Parsley sprigs 1/2 ts Pepper 1 cn Tomato sauce; 8 oz. 1 Egg 1 Carrot 3 tb A1 Sauce 1/2 ts Dried Oregano
TOPPING:
1/2 cn Tomato paste (3 oz) In food processor, shred carrot. Add remaining ingredients except for the tomato paste. Process until blended. Invert a 6 oz custard cup in center of a 9" glass pie plate. Shape mixture into a ring around cup. Spread the tomato paste over the top of the meat loaf. Cook in microwave on high 15 minutes or until juices run clear. Pour off any fat from dish before slicing.

MEAT LOAF IN A MUG
Ingredients: 2 tbsp MAGNOLIA FRESH MILK 1 tbsp tomato ketchup 2 tbsp oatmeal 1 tsp soup mix powder 1/3 cup MONTEREY GROUND BEEF 1 pc MAGNOLIA BROWN EGG
Procedure: 1. In a small bowl, combine milk, ketchup, oatmeal and soup mix. Crumble beef over mixture and mix well. 2. Put into a microwave-safe mug or shallow dish. Cover and microwave on high for 3 minutes or until meat is no longer pink. 3. After 2 minutes, crack an egg on top and continue to microwave for another minute or until egg is cooked according to preferred doneness. Consume immediately.

Cooking Meatloaf in the Toshiba Convection Microwave Oven

Today I'm trying something I've never done before. I'm going to be using a Toshiba convection microwave to cook a meatloaf from scratch. It's just like cooking in a regular oven, but without heating up the kitchen!
1 pound lean ground beef. I used 90% lean 3 large eggs 2 cups seasoned croutons. I used parmesan garlic salad croutons
Mix all ingredients together until mixed well. Put in microwave safe bowl. Cook for 9 minutes. If there ends up being any liquid in it I just take the meatloaf out and discard the liquid part. Usually its completely ready to eat though. If you like more or less croutons you can add more or less.

This microwave meatloaf is incredible and is really simple and quick! A perfect snack for any time. I use quick cooking oats in this recipe (so it can be gluten free!) and I found that by using oats and milk over breadcrumbs and egg, it keeps the meatloaf from drying out despite being cooked in the microwave.
