Jim Vorheis 1 c Unconverted long-grain rice
2 c Cold water
Touch of sea salt (optional) Plain Boiled Rice Put the rice into a bowl, cover with very hot water, and leave to soak about 8 minutes. Drain, rinse well, and set aside. Put 2 cups water in a heavy pot or earthenware bean pot, bring to a boil, sprinkle in the rice, and return to the boil. Cover the pan, turn the heat to the lowest possible point, and cook until all the water has been absorbed by the rice, shaking the pot from time to time so that it does not stick. Test the rice after about 15 minutes; if soft but not mushy, turn off the heat and leave the rice sitting, still covered, for a further 5 minutes. Very carefully loosen the rice with a fork, fluffing it up. Cover again and leave to sit for another 15 minutes. Add salt if desired. The Art of Mexican Cooking From the collection of Jim Vorheis

Pork ribs
2 Cups of water
1 Tbls Garlic salt
1 Tbls Lemon and pepper seasoning
1/2 Tsp Cumin

La morisqueta consiste en arroz cocido, combinado con frijoles y servido con una salsa de tomate, cebolla y ajo. Puede contener su elección de carne (res, pollo, carne molida incluso vegetariana). 2 tazas de agua
1 cucharada de sal de ajo
1 cucharada de condimento de limón y pimienta
1/2 cucharadita de comino

Salsa:
7 tomates
4 serranos
2 Ajos

Arroz:
3 tazas de arroz
6 tazas de agua

Morisqueta Tostada!
6 cups of cooked rice
200 grams mixed vegetables
3 pcs. chorizo bilbao
1 mdm onion
3 pcs eggs
2 pcs hot dog sliced into smaller pieces
5 cloves garlic
1 stalk green onions sliced into thin pieces
2 pcs. ham sliced
1 tsp. salt and pepper
procedure:
1.) beat and fry the eggs, then set aside.
2.) pan fry chorizo bilbao, ham hot dog and mixed vegetables (set aside)
3.) Saute garlic - divide 1/2 for garnish add the oinions and the six cups of rice
4.) Add the mixed vegetables
5.) Season with salt and pepper
6.) Fold the remaining fried garlic and green onion
7.) Cook for about 2 minutes then add the egg.
8.) Serve

1 pound of pork ribs in small pieces
1 pound of pork shoulder in small pieces
5 tomatoes
5 chiles serranos / if you don't want it spicy add 3
1 Chile guajillo
1 garlic clove
half of a small onion
2 whole black pepper
1 tsp of ground black pepper
1 tsp of ground cumin
tiny pinch of whole cumin
1 tbs and a half of chicken bouillon
1 tbs of garlic salt
Ingredients for Morisqueta / Rice
2 cups of rice of your choice
4 cups and a half of water
2 tsp of salt
cook time 20-25 mins all together
Measurement for perfect MORISQUETA
1 cup of rice - 2 cups of water and a half for water that boils away
3 cups of rice - 6 cups of water and a half
4 cups of rice - 8 cups of water and a half
