Il 2 Novembre si avvicina e in Sicilia per tradizione si mangia la MOFFOLETTA, detta anche muffuletta o muffoletta!
Si tratta di un pane tipico siciliano perfetto da farcire in mille modi diversi. Secondo la tradizione antica siciliana si condisce solo con olio, acciughe, sale e pepe ma le varianti sono davvero tantissime per cui potete accontentare davvero tutti!

Muffuletta, Pasta Salad & Deviled Eggs | Easy Picnic Food Ideas
On this week's Taste of Retirement, we're sharing our easy picnic food ideas with you for the ideal way to spend weekends outdoors. We've got a homemade mayonnaise with garlic, because everything is better with mayo. We also have a tasty pasta salad and a variety of deviled eggs. The beauty of this is they are all easy recipes too.
So we start of with our garlic mayo and it's really simple. Here's how to make it,
Garlic Mayonnaise Recipe:
6 cloves garlic
Juice of one lemon
5 eggs
2 cups grapeseed oil
2 tbsp dijon mustard
Salt for taste
Once the mayo is made, we now have the base for all of our foods. Pasta salad recipes:
1lb orecchiette pasta
1/3 cup shredded carrots
1/3 cup chopped celery
1/3 cup chopped green onion
1/3 cup peppadew peppers
2 tbsp chopped parsley
2 tbsp chopped dill
1 cup homemade mayo
2 tbsp dijon mustard
2 tbsp sour cream
1 tbsp garlic powder
Salt & Pepper to taste
The pasta salad is so tasty and delicious, with the uniqueness of the orecchiette pasta and the flavor of the homemade garlic mayo shining through. The real star of the show though is the peppadew peppers giving a sweetness and subtle heat to it. Next we had our deviled eggs recipe:
8 eggs
1/2 cup homemade mayo
1 tbsp dijon mustard
1/4 tsp smoked paprika
Tabasco sauce
Sale & pepper to taste
Fresh Dill
Capers
Crab
Smoked Salmon
Jalepeno Relish
Between the deviled eggs with crab meat, deviled eggs with jalapeno relish and deviled eggs with salmon and dill, these deviled eggs are bursting with different flavors. Finally, we have the star of the episode, the muffuletta sandwich and this was tasty. Muffuletta sandwich recipe:
Oil & Herb ciabatta loaf
1/2 cup giardiniera
1/2 cup homemade mayo
Salami
Capocollo
Hard Salami
Provolone cheese
Red wine vinegar
Dried Oregano
Salt & Pepper to taste

Muffuletta Sandwich
This muffuletta sandwich with gravy gave me all the feels! I used Casa Italia meats and Frico Cheese to bring it to life. Definitely a recipe you want to try!
Ingredients:
Gravy
2 tbsp unsalted butter
2 tbsp all-purpose flour
2 cups chicken stock
¾ tsp kosher salt
1 tsp garlic powder
1 tsp onion powder
1 tsp dried herbs
Muffuletta Sandwich
1 muffuletta (bread)
50g Casa Italia Genoa Salami
50g Casa Italia Soppresatta
50g Casa Italia Mortadella
25g Frico Gouda Cheese
25g Frico Swiss Cheese
1 cup olive salad/muffuletta spread
Instructions:
For the Gravy:
1. In a saucepan or small pot on low-medium heat melt butter, then add flour.
2. Stir frequently for several minutes to cook out the roux.
3. Deglaze with hot chicken stock, increase heat to medium, and mix well combining the rest of the gravy ingredients. Once the desired thickness is reached set aside for use.
For the Muffuletta Sandwich:
1. Pre-heat broiler on oven.
2. Slice muffuletta bread in half and drizzle with olive salad oil.
3. Spread olive salad mix on both sides and cover with Frico Gouda Cheese and Frico Swiss Cheese.
4. Broil bread until cheese melts.
5. Then add Casa Italia Genoa Salami, Soppresatta and Mortadella.
6. Cover with top bun, slice, and serve with gravy.

Olive salad:
1 cup stuffed green olives
1 cup Kalamata olives (pits removed)
2 cloves garlic
1 or 2 celery ribs
1 or 2 pickled carrots (or 1/2 cup giardiniera)
hand full of fresh parsley
oregano
olive oil
red wine vinegar
-chop up all ingredients to desired size, place in container and cover with vinegar, oil and a bit of juice from the olives. shoudl be able to just barely see liquid at the top. Then place in the fridge overnight.
Bread
1 cup warm water
1 tbs sugar
2 tbs yeast
2.5 cups flour
2 tsp salt
2 tbs vegetable shortening
sesame seeds
Dissolve sugar in warm water and add yeast. wait for yeast to bloom (est 10 min).
add flour, salt and shortening to a separate bowl and pour in bloomed yeast mixture
mix and knead for until dough is smooth and not too sticky. then oil the dough and cover for an hour until double in size.
punch down dough, for into approx. 10in round shape and place on a baking sheet. cover top with sesame seeds. then cover lose sly with plastic wrap and let it proof again for another hour.
bake at 425 for 15 minutes, then reduce over to 325 and bake for another 20 minutes.
