1 c Butterscotch Chips
- (Hershey's) 1/2 c Reese's Peanut Butter Chips
1 tb Shortening
-(do not use butter, - margarine or oil) 1 1/2 c Chow mein noodles
-- coarsely broken Line tray with wax paper. In medium microwave-safe bowl, place butterscotch chips, peanut butter chips and shortening. Microwave at HIGH (100%) 1 minute; stir. If necessary, microwave at HIGH an additional 15 seconds at a time, stirring after each heating, just until chips are melted and mixture is smooth when stirred. Immediately add chow mein noodles; stir to coat. Drop mixture by heaping teaspoonfuls onto prepared tray or into paper candy cups; let stand until firm. If necessary, cover and refrigerate until firm. Store in tightly covered container in refrigerator. About 2 dozen candies. Variation: Chocolate Haystacks: Substitute 1 cup Hershey's Semi-Sweet Chocolate Chips or Hershey's Milk Chocolate Chips for butterscotch chips. INGREDIENTS:
22 oz. butterscotch chips (two 11-oz. bags)
1 cup creamy peanut butter
1/2 cup nut topping (this is a ice cream topping that is finely chopped pecans, peanuts and other nuts) or you can use chopped peanuts.
11 oz. crunchy chow mein noodles (I use La Choy brand) this is about 5 cups
INSTRUCTIONS:
Add the butterscotch chips, peanut butter and nut topping. (WAIT TO ADD THE CHOW MEIN NOODLES)
Stir. Set the slow cooker to low.
Let this mixture melt together. Stir every 20 minutes. This will take about 40-60 minutes. Do not let scorch.
Using two spoons, or and ice cream scoop, make dollops of the mixture onto a baking sheet in a single layer lined with parchment paper or wax paper. The haystacks will harden without being refrigerated. If you are in a hurry you can put in the fridge, though. This recipe makes about 28 haystacks.

HAYSTACK COOKIES no-bake CRUNCHY cookies with chow mein noodles coated in butterscotch peanut butter
No-bake butterscotch haystack cookies are delicious crunchy cookies with chow mein and salted peanuts folded in butterscotch chips and peanut butter mix and topped with holiday sprinkles for extra fun.
Prep time: 10 minutes
Cook time: 2 minutes
Servings: 16 cookies (medium sized)
Ingredients
▢2 cups chow mein noodles
▢1 cup butterscotch chips
▢½ cup peanut butter creamy
▢1 cup salted peanuts can use other nuts like cashews, silvered almonds, chopped walnuts
▢Sprinkles optional
Instructions
1. In a large bowl toss fried chow mein noodles and salted peanuts together. Set it aside.
2. Add butterscotch chips and creamy peanut butter in another bowl. Melt in microwave or double boiler until just melted. Do not over heat.
3. Whisk the mix until smooth and creamy.
4. Pour the mix over chow mein noodles peanuts mix.
5. Using silicon spatula stir with gentle hands to get a uniform coat on chow mein noodles. Make sure not to break the noodles too much.
6. Using a 2 tablespoon scoop, scoop cookies onto a parchment paper or wax paper lined on baking tray.
Note: if using ice cream scoop be careful not to break chow mein noodles too much. I prefer to use wide spoons to scoop the cookies to avoid breaking noodles. But I found using 2 spoons one large and one small spoon is the best way to scoop out cookies without breaking it so it retains ‘haystack’ shape.
7. Immediately add sprinkles on top.
8. Allow it to set until completely hardened. Let it sit at room temperature for about 3-6 hours or pop it in fridge for about 1 hour or until set.
9. Serve and enjoy!

In this video, Kevin is making Butterscotch Haystacks. This is a simple recipe takes very little time to prepare. Once your haystacks go into the refrigerator, they only take 10-15 minutes to harden. They need to be kept refrigerated until served. Store in the refrigerator in an airtight container.

Butterscotch Haystacks
Ingredients
4 cups crunchy chow mein noodles
1 cup creamy peanut butter
1 bag butterscotch morsels
1 bag of chocolate eggs
Instructions
Place 4 cups of crunchy chow mein noodles in a large bowl.
In a separate microwave safe bowl, melt peanut butter and butterscotch morsels in the microwave in 30 second intervals for about two minutes stirring between each 30 second interval.
Pour butterscotch mixture over crunchy noodles and mix well.
Spoon mixture into muffin pan that has been sprayed with nonstick spray
Use a spoon to make a small crevice in the middle of each so eggs fit.
Allow to cool and harden for about an hour. Can put in refrigerator to harden faster.
Remove haystacks from muffin pan and add chocolate eggs.

Ingredients
1 stick of butter (1/2 cup)
2 cups sugar
1/2 cup milk
1 tsp vanilla extract
pinch of salt
3 cups oats
1 cup butterscotch chips
Instructions
In a large sauce pot combine butter, sugar, salt, and milk. Once mixture starts to boil set timer for 3 minutes, stirring occasionally. Turn off the heat and add oats, vanilla, and butterscotch chips and mix until chips are melted. Immediately drop spoonfuls onto parchment paper. Allow to cool until set.
