Oatmeal Carmelitas
these are the perfect treat... If you make them correctly, unlike me. I did mess up, i am sure they will taste fine. They may taste different than if i make them correctly and read the directions.

INGREDIENTS
• 2 cups flour
• 2 cups oatmeal (quick cook)
• 1.5 cups light brown sugar
• 1 tsp baking soda
• 1/2 tsp salt
• 3/4 cup cold, cubed butter
• 1 cup semi-sweet chocolate chips
• 1/2 cup chopped pecans (or other nut or omit)
• 3/4- 1 cup. caramel sauce
• 2 TBSP flour
DIRECTIONS
1. In food processor (or by hand), mix flour, oats, brown sugar, baking soda and salt. Slowly add in butter until mixture is clumpy.
2. Butter a 9x13 pan. Spread half of crumb mixture in bottom of pan and spread. I recommend wetting your clean fingers and using them to press the mixture into the bottom of the pan.
3. Bake at 350 for 10 minutes. While baking, combine caramel sauce with flour until mixed thoroughly.
4. Remove from oven. Sprinkle with chocolate chips, nuts and caramel sauce mixture. Top with crumbs (breaking up large clumps as you go).
5. Bake in oven for about 25 minutes, until golden brown.
6. Allow to cool before cutting into bars.

Carmelitas! Oat and Carmel Bars Recipe
Join me as I make Sweet Carmelita's, carmel and oat bars with chocolate & cinnamon chips!
Recipe:
1 1/2 sticks (3/4 Cup) butter, room temperature
3/4 Cup light brown sugar, packed
1 Cup old fashioned oats
1 Cup flour
1 tsp baking soda
1/2 Cup heavy cream
1 11 oz bag of carmels, I used Kraft
1 Cup chocolate chips, your choice
1/2 Cup cinnamon chips
1/2 Cup walnuts
Preheat oven to 350 degrees. Cream together brown sugar and butter. Add flour, oats and baking soda and mix. Divide dough in half. Place parchment paper in the bottom of an 8x8 pan. Press one half of dough into the bottom of the pan and bake for 10 min. While cookie base is baking, melt carmels and cream in a sauce pan over medium low heat. Once cookie is finished baking, pull out of oven and top with nuts and chips. Pour carmel sauce over chips and nuts. Crumble remaining dough as evenly as possible over carmel mixture. Bake for 15 to 20 minutes, until browned. Cool before cutting. Enjoy!
Oatmeal Carmelitas

Crust:
2 cups flour
2 cups quick-cooking rolled oats
1.5 cups firmly packed brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
1.25 cups butter
Filling:
1 jar caramel ice cream topping (12.5 oz)
3 tablespoons flour
1 cup semi-sweet chocolate chips
.5 cups chopped nuts

Chocolate Caramel Oat Bars (Carmelitas)
Make them at home!
Yield: 20- 24 bars
INGREDIENTS
2 cups Quick Oats
1 3/4 cups All Purpose Flour
1 1/2 cups Brown Sugar
1 tsp Baking Soda
1/4 tsp Salt
1 cup Melted Butter
2 1/2 cups Semi Sweet Chocolate Chips
50 Soft Caramels, unwrapped
1/2 cup Heavy Cream
PREPARATION
1. Preheat your oven to 350˚F/ 175˚C.
2. In a large mixing bowl, combine oats, flour, brown sugar, baking soda, salt, and melted butter. Mix until well combined and has a crumbly consistency.
3. Line a 9x13 baking pan with parchment paper and lightly coat with a nonstick spray.
4. Pour about 1/2 of the oat mixture into the pan and press with the back of a spoon or spatula until its nice and compact. Save the other 1/2 of the oat mixture for later!
5. Pour 2 cups of chocolate chips over the oat mixture and spread them out evenly. Save the 1/2 cup for the top.
6. In a saucepan, melt the soft caramels and the heavy cream until it becomes a smooth.
7. Pour melted caramel over the chocolate chips & oat mixture. Carefully spread the caramel until it covers the chocolate.
8. Pour the rest of the oat mixture over the caramel and spread out evenly.
9. Add the other 1/2 cup of chocolate chips on top.
10. Bake for 20-25 minutes, or until the crust has turned a golden brown. (Times and temperatures may vary from oven to oven)
11. Allow to cool COMPLETELY before cutting into bars.
