INGREDIENTS:

●1/4 teaspoon ground cinnamon
●1/8 teaspoon salt
●1/2 cup hot water
●9 tablespoons fat-free whipped topping

Old Fashioned Molasses Cookies
INGREDIENTS:
3/4 cup shortening
1 cup plain sugar
1 egg
1/4 cup molasses
2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 heaping teaspoon. ground ginger
1 heaping teaspoon cinnamon
3/4 teaspoon allspice
1/2 teaspoon cloves
Sparkling sugar for rolling
INSTRUCTIONS:
1. Beat shortening and white sugar together for 3-4 minutes, using electric mixer, until fluffy, scraping down sids as needed. Add egg and molasses and beat until well blended.
2. Mix the flour, baking soda, baking powder, salt, and spices in a large, separate mixing bowl. Add the flour mixture to shortening and sugar mixture one cup at a time. Mix at low speed after each addition until just combined.
3. Cover bowl with plastic wrap and chill in fridge one hour.
Preheat oven to 350 convection bake OR 375 on regular bake. Shape into tablespoon sized balls and roll in sugar individually.
4. Bake for 9-11 minutes, depending on how crisp you would like the edges. Cool on racks. Store in airtight container up to five days. (See notes for freezing instructions.)
Notes:
Like most cookie dough, this freezes very well. Shape, roll in sugar, and place the dough balls on a cookie sheet. Freeze on cookie sheet for a few hours, then place in freezer bag and freeze up to a few months. Add a minute or so to the baking time if baking from frozen.
You can also freeze fully baked and cooled cookies and simply defrost at room temperature.

Today we do another old cookbook recipe from a 1935 depression era Pennsylvania Dutch cookbook.
Ingredients:
1 cup molasses
6 tablespoons brown sugar
½ lemon (rind only)
3 tablespoons flour
1 teaspoon cinnamon
1 cup bread crumbs, fine
1 cup seedless raisins
6 tablespoons flour
4 tablespoons brown sugar
2 tablespoons shortening
Method:
Line a pie pan with pie crust. Spread over it the bread crumbs, and over these the raisins. Then place all the rest of the ingredients listed in the first column (molasses, brown sugar, lemon, flour, cinnamon) above, and mix. Pour this mixture over the pie. Then mix, in a second bowl, the ingredients listed in the second column above (flour, brown sugar, shortening). Make into fine crumbs with fingers. Spread over the pie. Then make inch wide strips of pie -crust and spread them criss-cross over the pie. Bake in a slow oven.

OLD-FASHIONED MOLASSES CAKE W/ COFFEE GLAZE
Preheat oven to 325 degrees F.
Lightly grease & flour (2) 9-inch square cake pans, set aside.
1 cup granulated sugar
1 cup all-vegetable shortening
1 cup molasses (substitute sorghum for molasses)
3 large eggs
3 cup all-purpose
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon ginger
1 cup whole buttermilk
1 cup pecans, chopped
1 cup dates, chopped
1 cup raisins
1. With a hand mixer, on medium-speed, beat all-vegetable shortening and granulated sugar together until fluffy.
2. Add molasses to shortening mixture. Beat well. Add eggs, 1 at a time, beating until blended after each addition.
3. In a large bowl; add flour, baking soda, baking powder, ginger, and cinnamon. Whisk well.
4. Gradually add flour mixture to molasses mixture alternating with buttermilk. (Begin and end with flour mixture). Beat at low speed just until blended after each addition.
5. With a large spoon; stir pecan, dates, and raisins into cake batter until well coated.
6. Divide cake batter equally into the prepared cake pans.
7. Bake on middle oven rack for 45-50 minutes, or until toothpick inserted come out clean.
8. Cool in cake pans for 5-10 minutes. Remove from cake pans onto wire cooling racks. Cool completely for 40 minutes.
COFFEE GLAZE
1 cup powdered sugar
1-1/2 teaspoons strong brewed coffee (milk or water maybe substituted for coffee)
1. Whisk powdered sugar and coffee until smooth. Drizzle on top of cakes.
