Healthy Blueberry Muffins???? This recipe is gluten-free, refined sugar-free & dairy-free! These muffins are so moist and super delicious????

This recipe makes about 10 muffins
•
Ingredients
2 mashed bananas
2 eggs
1/4 cup peanut butter (60 ml)
1/3 cup gluten-free oat/almond flour (80 ml)
1 teaspoon baking powder
1 teaspoon cinnamon
1 cup blueberries fresh/frozen (240 ml) (I used wild blueberries)

1. Mix the wet ingredients together
2. Add the dry ingredients and stir until combined
3. Fold in the blueberries
4. Spoon to muffin pan lined with muffin liners
5. Bake at 180 Celsius degrees / 350 in Fahrenheit for about 15-20 minutes
6. When the muffins have cooled a little bit, transfer them to a wire rack and let cool and enjoy! (Store in an air-tight container)

3 medium apples; 2 apples chopped, and 1 apple grated
Wet Ingredients
¾ cup non-dairy milk any
¾ cup sugar
3 tablespoons olive oil or other vegetable oil
2 teaspoons vanilla extract
Dry Ingredients
2 cups all-purpose flour or 50% all-purpose and 50% whole wheat flour
2 teaspoons baking powder
½ teaspoon baking soda optional
1 pinch salt
Optional Topping
1 teaspoon cinnamon
2 tablespoons sugar
Bake at 350°F or 180°C for 27 minutes, until the muffins are golden-brown on top and a toothpick inserted in the center comes out dry.

Ingredients:
• 1/3 cup of ILIADA Organic Kalamata PDO Extra Virgin Olive Oil
• ½ cup of ILIADA Organic Kalamata Olives Pitted
• 1 ¾ cup of all-purpose flour
• ¾ cup of parmesan
• 1 tbsp. sugar
• 3 tsp. baking powder
• 1 tsp. fresh rosemary, finely chopped - only the leaves
• 1 tsp. fresh thyme
• ¼ tsp. baking soda
• ½ tsp. garlic powder
• ¼ tsp. pepper
• 1 egg, lightly beaten
• ½ cup of milk
• ½ cup of tomato sauce
• 2 tbsp. sundried tomatoes
• 4 cherry tomatoes cut in four for decoration
• ¼ cup of parmesan for sprinkling
Method:
• In a bowl mix the flour, parmesan, sugar, baking powder, rosemary, baking soda, garlic
and pepper. In the center of the mixture form with your hands a puddle
• In another bowl mix the beaten egg, milk, tomato sauce and the olive oil
• Pour the liquid mixture into the puddle in the solid mixture and stir well with a spatula till
the ingredients are homogenized
• Take an 8-cup muffin pan
• Flour the sundried tomatoes and olives and place them in the muffin cups
• Fill each tray with 2/3 of the dough
• Sprinkle with grated parmesan and put 2 pieces of cherry tomatoes, olives and 2
rosemary leaves on the top
• Bake in a preheated oven at 180 degrees for 15 minutes or until the muffins are lightly
browned
• Let the muffins stand for 5 minutes our of the oven and then remove and place them on
a grill to cool
