Asian Meatballs with Yakisoba
This Asian Meatball recipe with yakisoba is an easy, flexible meal solution for busy weeknights but also 5-star spectacular for company! The Asian Meatballs are juicy, tender, flavor bombs, tossed with my favorite, easy-to use, Fortune Yakisoba Noodles and crisp-tender stir-fried veggies, all enveloped in a dynamic sticky, sweet, tangy, honey sesame sauce punctuated by zesty ginger, punchy garlic and chili sauce. This recipe is a symphony of tantalizing flavors and textures that’s easy to customize with whatever veggies you have on hand. Best of all, the Asian Meatballs get baked while you prep the rest of the ingredients, then it’s just a 10-minute stir fry to dinner! Serve it up with some potstickers, crispy crab rangoons or egg rolls for pure taste bud magic.

Savory and Amazing Asian Meatballs and Lo Mein Recipe
This one is always well received! The lo mein is so savory and delicious! A must try.
Asian Meatballs and Lo Mein
Ingredients
• 1 lb. ground beef
• 1 lb. ground pork
• 1 beaten egg
• 4 scallions – chopped (green included)
• ½ cup panko breadcrumbs
• 1 Tbsp heavy cream or milk
• 1 tsp minced garlic
• 2 Tbsp low sodium soy sauce
• ½ Tbsp hoisin sauce
• 1 tsp pepper
• ½ tsp sesame oil
• ½ tsp Chinese five spice
• 1 tsp ground ginger
• ½ Tbsp parsley
Directions
1. Blend everything together. Form into meatballs.
2. Line tray with parchment paper. Place meatballs on tray.
3. Bake at 425º 25 minutes, turning over halfway through time.
** Notes: Ground meat above can be substituted for 2 pounds of ground chicken. I prefer the combo above though.
Lo Mein
Ingredients
• 16 oz spaghetti
• 4 baby bella mushrooms - sliced
• 2 cups matchstick carrots
• 1 red bell pepper- sliced into strips
• 6 scallions- chopped
• Small broccoli crown – cut into bite sized pieces
• 2-3 cups spinach
• Olive oil or sesame oil for sauteing vegetables
**Notes: Vegetables to use can be anything you want to put together. Snow peas, asparagus and snap peas to name a few.
Directions
1. Cook spaghetti according to package directions and ala dente. Drain.
2. Clean and slice vegetables as stated above.
3. Sauté veggies in oil starting with carrots, pepper strips and broccoli. Do not overcook, keep slightly crisp. Add in mushrooms and scallion. Sauté for a few minutes. Add spinach and sauté until wilted.
4. Add spaghetti and veggies into pan that you cooked spaghetti in and blend. Add half the sauce below to the spaghetti and veggies.
Sauce for both Meatballs and Lo Mein – divided in half
Ingredients
• 1 cup low sodium soy sauce
• ¼ cup dark brown sugar
• 1 Tbsp sesame oil
• 1 Tbsp grated ginger or 1 tsp ground ginger
• 1 Tbsp hot sauce
• 1/2 – 1 tsp cornstarch to thicken to half mixture for meatballs
** Notes: Simply cut recipe for sauce in half and omit cornstarch if just making Lo Mein.
Directions
1. Whisk the ingredients together. Pour half over sauteed veggies and spaghetti. Save the other half for the meatballs. Place half mixture into small pan and cook over medium heat. Mix cornstarch into half mixture for meatballs to thicken. Cook until thicken and pour over meatballs. Can simmer meatballs in sauce over very low heat to get flavor through meatballs for 5 minutes.
