How To make Pineapple Fudge
2 c Sugar
1 c Brown sugar
1 cn (8 1/2-ounce) crushed
Pineapple and juice 1/2 c Milk
1 T Corn syrup
1/4 t Salt
2 T Butter
24 lg Marshmallows
1 t Vanilla
1 c Chopped pecans or walnuts
Combine sugars, pineapple and juice, milk, corn syrup, salt, and butter in a 2-quart saucepan. Cook to 238 degrees F., stirring occasionally. Remove from heat and add marshmallows and vanilla. Mix together to melt marshmallow, then beat until mixture becomes heavy and creamy. Add nuts. Spread in a buttered 8-inch square pan. Cut into squares when cool and firm. Makes about 49 pieces.

Ingredients

2 1/2 c. white chocolate chips
1/2 c. chopped canned pineapple, drained and patted dry
16 maraschino cherries, stems removed
Directions
1. Line an 8”x 8” baking dish with parchment paper and spray with nonstick cooking spray. Pour sweetened condensed milk and cake mix into a large bowl, stirring to combine.
2. Add white chocolate chips, then microwave in 1-minute intervals, stirring in between, until fully melted. Fold in pineapple and pour into prepared baking dish.
3. Place cherries on top of fudge and place in the refrigerator to harden, about 2 hours. Cut into squares and serve.

Randy Makes Pineapple Upside Down Fudge
This sweet, tangy treat is perfect for a luau or any time you need a taste of the tropics.
INGREDIENTS
1 (14-oz.) can sweetened condensed milk
1/2 c. pineapple upside-down cake mix
2 1/2 c. white chocolate chips
1/2 c. chopped canned pineapple, drained and patted dry
8 maraschino cherries
SUPPLIES
8x8 baking pan
Some parchment paper
A large, microwave-safe bowl
A spatula
DIRECTIONS
Line an 8”x 8” baking dish and set it aside.
Prep the cherries by removing the stems. How many cherries you need depends on how large you want your fudge. If you want large pieces, you can use an entire cherry for each piece. I usually cut my fudge into one-inch pieces, so I’m cutting 8 cherries into eighths.
Pour the sweetened condensed milk and cake mix into a large bowl, stirring to combine.
Add the white chocolate chips, then microwave in 30-second intervals, stirring in between, until it’s fully melted.
Fold in the pineapple and pour the mixture into the lined baking dish.
Place cherries on top of the fudge and place in the refrigerator to set, at least 2 hours.
Remove the fudge from the pan and cut it into whatever size pieces you'd like.
