How To make Pineapple Liqueur
2 c Fresh pineapple
2 c Vodka
1/2 c Sugar syrup (see recipe)
Buy the largest pineapple you can find as it will give you more meat. Look for yellow to golden orange color for sweet tasting meat. Avoid greenish color, bruises, discoloured areas, soft spots, or dried out brown leaves. Slice pineapple and combine with vodka in jar. Steep for 1 week. Strain and squeeze as much juice as possible from pineapple. Filter a few times until liquid is smooth and pulp free. Add sugar syrup to taste. Pineapple juice may be added for additional taste if desired. Age 1 month. Yield: 3 cups Container: Wide mouth quart jar

I'm making another concoction in the kitchen with a $2 pineapple. This time I made a liqueur version of a Margarita - it's richer and sweeter than a regular Margarita but it makes quite a versatile drink.
I was going to put a description of the recipe in here but I made this weeks ago and kind of forget. I made Tepache to this recipe:
1 ripe pineapple
1 cup light brown sugar
8 cups water
Add whatever spices you like, e.g. cinnamon, cloves, star anise
Cover and let ferment for two days.
The pineapple syrup:
1 part pineapple
2 parts sugar
1 part water
The final drink (if I remember right)
450ml pineapple infuses tequila
100ml tepache
100ml lime liqueur
100ml sugar syrup

INGREDIENTS
- 45mL White Rum (1½ oz)
- 15mL Gold Rum (½ oz)
- 37.5mL Pineapple Juice (1.25 oz)
- 22.5mL Fresh Lime Juice (¾ oz) - original recipe had 0mL
- 22.5mL Simple Syrup (¾ oz) - original recipe had 10mL
- 2 Dashes of Angostura Bitters
- Soda to top
METHOD
1. Combine all ingredients except soda to your cocktail shaker
2. Shake with ice
3. Add a dash of soda to your shaker
4. Strain into a high ball glass with ice
5. Garnish with a pineapple wedge

Today I remake the Pineapple Wine using the yeasts for Prosecco wine: so as to obtain a nice sparkling wine with an alcohol content of 11.7%
