Guardanapo Portuguese Cake
Diana and Carolina baked Guardanapos
Guardanapo is a very common cake that you can find in any bakery or cafe in Portugal.
The word Guardanapo, English for Napkin comes from it's shape.
Recipe for 6 individual cakes
To make the Sponge cake:
Eggs 6
Flour 90g / 3.17oz
Sugar 110g / 3.88oz
To make the Vanilla custard:
Egg yolks 5
Milk 500ml / 17oz
Cornflour 45g / 1.58oz
Sugar 45g / 1.58oz
Vanilla essence 1/2 tsp
Butter 50g / 1.7oz
If you're fast enough in the kitchen you can make the sponge first otherwise we advise you to make the custard first and reserve it.
The sponge cake, we call it Pao de lo in portuguese and it's very fluffy!
Start by beating the eggs with the sugar for 5 minutes, finely add the flour and gently mix without beating.
Spread in a shallow tray and put in the pre-heated oven at 180C / 356F for 8 minutes.
To make the custard, start by mixing together the egg yolks, the cornflour and sugar, then add in the milk and put it in the hob high temperature for making it thick, finally add in the vanilla essence and butter, keep whisking until the custard feels thick.
Making the Guardanapos, in a clean cloth sprinkle abundantly with sugar, move the sponge over the sugar, cut the ends of your rectangle sponge, have a taste at what you did :)
Spread the custard evenly throughout the rectangle of sponge cake, with a big knife, cut the rectangle into smaller squares, adding cinnamon is optional, most places in Portugal don't.
Bend each square into a triangle with the custard inside, happy eating ;)
